Monday Menu #133- Steak Dinner & Tuna Salad

Your family meals don’t have to take a back seat just because it’s the week before Easter. Monday Menu can still help you easily get dinner on the table even though you’re prepping for the big day! This week, I’ve got 2 meal ideas, breakfast, snack and dessert recipes that will help you prep for your Easter dinner and feed your people all at the same time!

This Week’s Secret To Success

Many of the ingredients and dishes for this week’s meal ideas can also be used for your Easter meal prep. This makes your grocery shopping and your time in the kitchen easier and much more efficient. And that is golden during a week preceding a holiday that is sure to be packed with activities, errands and last minute preparations!

Buy twice the asparagus you need for Menu 1 this week and use the second bundle to make a colorful and delicious Strawberry Asparagus Salad for your Easter dinner or brunch, as dippers for elegant Wasabi Mayo Dip or for Bacon Parmesan Asparagus Twists. One purchase serves you now and later- a holiday prep time saver!

The same can be done with the carrots in Menu 2. Buy enough carrots for those simple, healthy carrots fries to go with your Quick Tuna Salad (or pimento cheese if you want to do a little something for The Masters and your golf fans), then use the rest for an Easy Carrot Souffle or Garlic Honey Glazed Carrots or Carrot Zucchini Walnut Muffins.

How far in advance can I boil eggs for deviled eggs?

Eggs for Easter deviled eggs can be boiled and refrigerated for up to 48 hours in advance. The key is to boil, peel, halve them and remove the yolks. Store the halved whites and yellows separately covered tightly in the refrigerator until you are ready to use them.

Boil more eggs than you will need for your holiday dinner. Use a few during the week to fill in Menu 2 and the rest of your eggs will be prepped and ready to go for the big day.

Menu 1- Easy Steak Dinner

This week calls for a little simple "surf & turf" at home. It's easier than you might think!
