Rich, beefy and completely comforting, French Onion Beef & Noodles is an easy one pot meal you can get on the table in 30 minutes! Made with savory stew meat, tender egg noodles, sour cream, French onion soup and crispy fried onions, this is a welcome addition to the weekly dinner rotation.

I came across this dish while scrolling through YouTube and knew I had to try it! Everything about it promised ultimate comfort food. The juicy, steak, beefy bites, the creamy sauce…

It was like my one pot beef stroganoff and French onion soup recipes got together in one big pot to do something entirely new for dinner! And why not? Their flavors are totally complementary of each other, rich, savory, the slight sweetness of the onions, the velvety pasta. It all makes this combo 100% genius!

One Pot Meals Are The Best

And what’s even smarter is that it’s made all in one pot. This is perfect for family meals on busy nights or casual entertaining because it makes clean up a snap and doesn’t mess up the kitchen. No prep, no extra dishes. One and done. Easy, perfect, welcoming and delicious!

  • extra wide egg noodles
  • beef broth
  • French onion soup
  • beef stew meat (or beef tips, if you prefer)
  • sour cream
  • crispy french fried onions
  • fresh flat Italian parsley
  • minced garlic
  • salt & pepper

Recipe Notes: The difference between stew meat and beef tips is where it originates. Beef tips (or steak tips) are generally made from the tip of the tenderloin and are generally more tender and expensive than stew meat.

Stew meat, on the other hand, is made from cuts like the rump roast, making it tougher but less expensive. Stew meat is made tender with cook times and liquids.

How to Make Tender French Onion Beef & Noodles

Sear the Beef. Heat olive oil in a dutch oven or large pot over medium high heat. Add minced garlic to the oil and stir until it begins to brown. Now it’s time for the beef! Add it to the pot and season it with salt and pepper. Cook it for about 3 minutes, stirring and turning it over, until seared on all sides. (The beef will be completely cooked by the end of the recipe.)

Add the Liquids. Add beef broth & soup. Turn down the heat to medium and allow to simmer for 10 minutes to tenderize the beef.

Fold in the Noodles. Add uncooked egg noodles to the pot. Gently fold and poke them into the broth so they can cook. Turn heat down to low, cover and allow noodles to cook until tender, about 7 minutes, stirring occasionally to keep the noodles from sticking.

Finish! Remove from heat. Fold in sour cream. Top with fried onions and parsley to serve.

  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 pound beef stew meat
  • 1 teaspoon salt (or salt to taste)
  • 1 teaspoon pepper
  • 3 cups beef broth (use beef bone broth for added nutrition)
  • 10.5 ounces French onion soup (1 can of soup)
  • 12 ounces extra wide egg noodles
  • 8 ounces sour cream
  • 1 cup fried onions

    This sounds delicious! Does the meat get cooked through by just searing and then it cooking in the liquid for the time indicated?

      Tried this tonight. Was pretty easy to make and had everything but the soup on hand. A quick trip to the store and got started. It turned out tasting delicious. The only issue we had was the meat never got anywhere near tender. I’ll try cooking the meat in a pressure cooker next time, getting it tender really fast and then going from there.

        Hi, Richard! I am so glad you liked this recipe! It’s such a tasty comfort meal. I hate to hear your beef didn’t get tender. That can happen depending on cut and quality. I think the pressure cooker is a great idea! You can also check the tenderness of the meat after step #3 and extend the cooking time there if needed. Enjoy!
