Heat olive oil in a dutch oven or large pot over medium high heat.
Add garlic to the oil and stir until it begins to brown. Add beef to the pot and season with salt and pepper. Cook beef for about 3 minutes, stirring and turning it over, until seared on all sides. (The beef will be completely cooked by the end of the recipe.)
Add beef broth & soup. Turn down the heat to medium and allow to simmer for 10 minutes to tenderize the beef.
Add uncooked egg noodles to the pot. Gently fold and poke them into the broth so they can cook. Turn heat down to low, cover and allow noodles to cook until tender, about 7 minutes, stirring occasionally to keep the noodles from sticking.
Remove from heat. Fold in sour cream. Top with fried onions and parsley to serve!
