This week’s menus both feature salads. I usually try to avoid putting together meal plans with similar dishes, but let’s face it. (1) It’s hot. (2) And getting back into the swing of structured routines with school and such is hard. So why not give ourselves a break with a couple of easy meals that are light, but incredible satisfying?
Steak Caprese Salad is one of our favorites. A light twist on a steak dinner, it never leaves us feeling hungry. The same can be said for Waldforf Chicken Salad! The savory chicken and pasta against the occasional sweet grape just keeps us coming back for more.
