- Sometimes, I’m not so lucky as to get fresh peaches at my farmer’s market or a roadside stand. Instead, I have to get them at the grocery store, which means they might not have ripened on the tree before they were picked. In this case, the peaches might not be as sweet or juicy (all the things we love in a peach!) as I would like them to be. To fix this, I simply slice my peaches, toss the slices in a bowl, sprinkle with a little sugar and set them aside. Just remember to drain them before you put them on your pizza!

BBQ Pulled Pork & Peach Pizza
Equipment
- pizza stone
Ingredients
- (1) 10-12 inch pre-made pizza crust
- 1 tsp olive oil
- garlic powder
- ¼ C BBQ sauce
- ¼ C grated mozzarella cheese
- ¼ C pulled pork
- ½ medium peach, sliced thin
- ¼ small red onion, sliced thin
- 1-2 tablespoon goat cheese crumbles
- 1-2 tablespoon chopped cilantro
Instructions
- Preheat oven to 425° Fahrenheit. Place pizza stone in oven to heat also.
- While stone and oven are heating, slice onion, peaches; chop cilantro and grate mozzarella.
- When oven is preheated, remove stone. Place crust on heated stone. Brush on olive oil and lightly sprinkle with garlic powder. Place in oven and cook for 5 minutes to crisp.
- Remove crust from oven. Spread BBQ sauce on crust, leaving 1- ½ inch of outer edge uncovered. Top sauce evenly with grated mozzarella, then pulled pork. Arrange 15-18 peaches slices on top of pork. Top with red onion slivers to taste. Evenly sprinkle pizza with goat cheese crumbles and a few extra shreds of mozzarella. Place back in oven for 8-10 minutes.
- Remove pizza from oven. Drizzle with extra BBQ sauce and top with cilantro. Serve while hot.
