Ingredients
Apple, Pear, Pomegranate Salad
- 10 oz. Romaine & Radicchio salad mix, washed with core pieces removed
- 4 oz. pomegranate arils, or seeds
- 1 medium apple, thinly sliced
- 1 medium pear, thinly sliced
- 4 oz. glazed pecans
- ¼ medium red onion, thinly sliced
- 2 oz. goat cheese crumbles
- 2 tablespoon pepitas
Pomegranate Vinaigrette
- ½ C pomegranate juice
- â…“ C virgin olive oil
- ¼ C red wine vinegar
- 2 tablespoon honey
- 2 teaspoon dijon mustard
- ¼ teaspoon coarse ground black pepper
- ¼ teaspoon minced garlic
- pinch red pepper flakes
- salt to taste
Instructions
- In a large salad bowl, add all ingredients except goat cheese. Toss ingredients together.
- In a jar with lid, add dressing ingredients. Shake vigorously. Drizzle over salad and toss salad again. Sprinkle goat cheese over top. Serve immediately
- If not serving immediately, add apples, pears, goat cheese and dressing right before serving.
