Apple, Pear, Pomegranate Salad with Pomegranate Vinaigrette
This fresh salad of pomegranate seeds, pears, apples with crisp Romaine, glazed pecans, goat cheese & red onion is the perfect fall side dish! An easy pomegranate vinaigrette dressing drizzle tops it off!
10oz.Romaine & Radicchio salad mix, washed with core pieces removed
4oz.pomegranate arils, or seeds
1mediumapple, thinly sliced
1mediumpear,thinly sliced
4oz.glazed pecans
¼mediumred onion, thinly sliced
2oz.goat cheese crumbles
2tablespoonpepitas
Pomegranate Vinaigrette
½Cpomegranate juice
⅓Cvirgin olive oil
¼Cred wine vinegar
2tablespoonhoney
2teaspoondijon mustard
¼teaspooncoarse ground black pepper
¼teaspoonminced garlic
pinchred pepper flakes
salt to taste

Instructions
In a large salad bowl, add all ingredients except goat cheese. Toss ingredients together.
In a jar with lid, add dressing ingredients. Shake vigorously. Drizzle over salad and toss salad again. Sprinkle goat cheese over top. Serve immediately
If not serving immediately, add apples, pears, goat cheese and dressing right before serving.
Notes
Add sliced chicken or turkey and avocado to make an entire meal. Makes 2 dinner salads.
