One of the things I like best about fall is its simple, seasonal food. We all know that there is so much more to fall flavors than just pumpkin. And even though I do love the celebrated orange gourd, a far less extolled little fruit with big hips just might be my favorite. Green, red, or somewhere in between, it’s the pear that sings my autumn song.
Moreover, if we compare the pear to another fall favorite, the apple, we find that the pear has less sugar and more fiber than a comparably sized apple. Not to mention that a pear can do almost anything an apple can do as far as jellies, preserves, butters, and baked goods are concerned. And since the pear is a lesser used fruit, when we do use them they have the tendency to give our dishes that sense of something special that prompts our guests to sit up and take notice.
And that is just what happens when this quick and easy pear galette shows up for coffee or graces your family table. Simple to make with beautiful seasonal fruit and a humble but elegant appearance, the pear galette embodies the best of all that fall has to offer.
Rustic Pear Galette
Ingredients:
- 2 pears, thinly sliced
- ¼ C brown sugar, packed (plus extra for sprinkling)
- 1 lemon, juiced
- ¼ tsp. cinnamon (plus extra for sprinkling)
- â…› tsp. ginger
- pinch of salt
- 1 package refrigerated pie crust (containing 2 crusts)
- ¼ C + ⅛ C chopped walnuts
- 1 tablespoon butter, melted
- 1 egg, white separated
Process:
Preheat oven to 400 degrees. In a large bowl, combine pears, ¼ C brown sugar, lemon juice, cinnamon, ginger, and salt. Toss gently to coat. Line a baking sheet with parchment paper. Unroll 1 pie crust and spread ¼ C walnuts on the center of the crust. Place second pie crust on top and gently press the crusts together to form one crust, sealing in the nuts. Lightly brush top of crust with butter. Spoon pear mixture in the center of the pie crust. Arrange the pears, leaving a 3-4 inch border from the edge of the crust. Add ⅛ C walnuts to the pears. Fold the edges of the dough toward the center of the crust, pressing fold edges gently together to seal. Brush crust with egg white to help the crust achieve a nice golden brown when baking. Pour any left over butter over pears, sprinkle crust and pears with extra brown sugar and cinnamon. Bake 20-25 minutes or until golden brown. Use strips of foil to shield the edges to prevent over browning, if necessary. Serve warm. For a memorable fall treat, serve with a scoop of brown walnut ice cream and drizzled with honey!

This sounds sooo good! We love pears, too – and the idea of a rustic pie topped with black walnut ice cream and drizzled with honey seems so fancy, but really easy at the same time. Yum!! =)

Yes! Exactly! Sounds so fancy and presents so well, but soooo easy on the prep side! Bluebell has a great black walnut ice cream that I use for this. And the pears? They stay a little crisp, which I love.

I usually have some tips on that, but I am afraid I don’t for this recipe. I guess I need to research a gluten free pie crust. I know they are out there somewhere! And thank you about the pics!
