This Easter we are keeping it low key with a welcoming family picnic on the porch.  On the menu is old fashioned coconut ice box cake, a spinach salad with hot bacon dressing, and the usual deviled eggs and pickles. But the real star of this stress-free picnic are these pretty little strawberry cream cheese sandwiches that my mom used to served in a little tea house she ran down in Texas. They have always been a hit at any party, shower, or gathering where I’ve taken them.Two croissants stuffed with strawberries, spinach, and ham and garnished with extra strawberries and served on a beaded sliver platter.

These scrumptious little delicacies can be made with turkey or ham, but for Easter we are going with ham because that is what everyone expects, right?  If you have already settled your Easter menu or think that perhaps your family would never go for sandwiches on Easter, then this recipe just can’t be beat for all of that leftover ham you know you’re going to have.

So go ahead and make a quick run to the grocery for the extra ingredients.  Because once you see these little ladies, you are going to want to make some for sure.


Strawberry Cream Cheese Sandwiches

  • large croissants
  • strawberries
  • shaved or sliced ham
  • cream cheese
  • sugar or sweetener
  • Baby spinach, washed with stems removed

Let’s Get Started!

Set out the cream cheese to soften while you prepare the bread.

Now it is time to prepare the strawberries by slicing them. (You will need about 6-8 slices per sandwich.)

When the cream cheese is soft, mix it thoroughly with the sugar to create a creamy spread.  (Try to resist dipping a strawberry or two and munching away on the yummiest thing this side of Heaven.  But if you just can’t resist, there should be enough cream cheese for a little taste or two!)

Next, take that lovely cream cheese mixture and spread a generous amount on the bottom half of the croissant.

Now it’s time to build our strawberry cream cheese sandwiches! Layer on the strawberries, then the ham.

Then some leaves of spinach.  Add a thin layer of cream cheese on the inside of the top of the croissant.  This helps keep the spinach in place as you put the sandwich together and later eat it. Ingredients

  4. 8 oz. cream cheese
  5. 1 Tbsp. sugar or sweetener
  6. Baby spinach, washed with stems removed
