This week’s meals make the most of Easter leftovers so you can take a break! Chopped Ham Salad, Southern Salmon Patties and smart side dishes creatively use what you already have to make simple meals everybody will eat up. Plus, don’t forget about breakfast, snack and dessert ideas to keep everyone happy.

This Week’s Secret To Success

Nobody really feels up to cooking the week after a holiday, but for some reason everybody still wants to eat! That’s why making the most of Easter leftovers to create simple, delicious, satisfying meals is really the only way to go.

  • Start this week off with a simple chopped ham salad using that leftover ham. It can be served on sandwiches, crackers, wraps or a bed of lettuce.
  • It has loads of flavor and texture your family will love. We’re not talking a ham spread here, but everything you love about a ham sandwich in one simple recipe.
  • Menu 1 also uses any leftover deviled eggs or hard boiled eggs to round out the meal.
  • Ham & Swiss Quiche uses that last bit of leftover ham for breakfast.
  • If you’re not up for making salmon patties this week, sub the quiche in for meal #2.
