The secret to flavorful rice is cooking it in broth instead of water.  The rice soaks in all that rich, brothy goodness while it simmers, creating savory layers of delicious as it steams and plumps to the perfect tenderness.  Add a few mild green chiles and a diced onion to the mix and you’ve got a rice dish that’s no slouch in the taste department.

Ingredients

  • 32 oz. chicken broth
  • 2 C long grain white rice
  • (2) 4 oz. cans green chiles
  • 1 medium onion, diced
  • 1 Tbsp butter
  • 1/4 tsp salt

Instructions

  • In a large saucepan, combine broth, rice, undrained chiles, onion, butter and salt. Bring to a boil over high heat. Stir, then reduce heat to low. Cover and simmer until rice is tender (about 20-25 minutes). Remove from heat, fluff with a fork and serve.

Notes

Finish with a spritz or two of lime for even more flavor when serving this with your favorite Mexican dishes.
