Green Chile Rice
Ingredients
- 32 oz. chicken broth
- 2 C long grain white rice
- (2) 4 oz. cans green chiles
- 1 medium onion, diced
- 1 tablespoon butter
- ¼ teaspoon salt
Instructions
- In a large saucepan, combine broth, rice, undrained chiles, onion, butter and salt. Bring to a boil over high heat. Stir, then reduce heat to low. Cover and simmer until rice is tender (about 20-25 minutes). Remove from heat, fluff with a fork and serve.
