This Week’s Secret To Success
It’s not often that leftovers are enjoyed more than the original by everyone. But in the case of these meal ideas, that just might be the case!
- Meals that center around a large protein as the main dish are prime candidates for creative leftover follow-up meals!
- Think baked chicken to enchiladas or chicken salad.
- Or pulled pork to pizza.
- This week, it’s classic Sunday pot roast to real deal po’ boys!
- If you know this is the strategy you’re going to use, you can even cook extra protein for the 1st meal to make sure you have plenty for the second.
- It doesn’t add any time to the 1st meal, but will save you 30 minutes- 1 hour cook time for the next meal.
Swaps For Your Family
- Instead of red potatoes, try chunked sweet potatoes (or a mix of the 2 potatoes) in your pot roast for a twist.
- In place of cornbread, try shortcut pull apart rolls instead.

Getting The Most From This Menu
- To simplify this menu, don’t add potatoes or carrots to your roast. Make the mac & cheese from Menu 2 as your side dish instead. Use the leftover pot roast + mac & cheese to make Menu 2.
- Use any leftover salad as your tomato and lettuce for your sandwiches.
- And as always, the breakfast casserole is a make once and “have breakfast all week” kind of deal. But it also makes a stellar 3rd dinner when served with a salad.

Menu 1- Classic Pot Roast
Nothing says Sunday dinner like a fork tender, classic Southern Pot Roast recipe with carrots and potatoes. Cooked low and slow with beef broth, red wine, savory seasonings, aromatic herbs and plenty of dinner vegetables, this traditional comfort food is the perfect dinner when served with sweet potato cornbread and a simple green salad.
Menu 2- Roast Beef Po' Boys
We're using leftovers this week to make Po' Boys! A Roast Beef Po Boy is a Louisiana favorite, chock full of rich, fall-apart beef roast bathed in its own debris gravy, wrapped in crispy, light French bread and dressed to the nines with creamy horseradish, lettuce, tomatoes and Provolone cheese. Serve it with Pimento Mac n Cheese & Easy Tomato Soup for a meal that feels nothing like leftovers!
