This Week’s Secret To Success
We might be transitioning into fall, but there is still plenty of ways to take advantage of in-season/end-of-summer fresh produce. This week’s menu capitalizes on that!
- Look for mint, blackberries, apples, zucchini, squash, pears, molasses and figsat your farmer’s markets for this week’s fresh food haul!
- Use a rotisserie chicken to make quick work of the white chicken chili recipe.
- 2 chickens if you want to use white meat only. 1 chicken if you don’t mind using the white and dark meat.
- Toss apples and pears in 1-2 tablespoons of lemon juice to keep them from turning brown after slicing. Use them for the tea, the salad and as dippers for the peanut butter fruit dip.

Getting The Most From This Menu
- Not interested in making the fruit tea for meal time? That’s ok! Save it for the weekend when you’re taking things a bit slower and want something a little special. Invite over a friend and serve it with the Apple Muffins or fruit dip for a snack to share.
- Serve the salad with the chili, make enough rolls for both meals, and this menu still works great for feeding the family!

Menu 1- Cream Cheese Chicken Chili
This easy recipe for White Chicken Chili is loaded with flavor and made wonderfully thick and creamy using rich cream cheese, creamed corn, shredded chicken, white beans and salsa verde. Make it in the crock pot or on the stove top. Either way, when served with easy pull-apart rolls and apple mint tea, this creamy white chili is bound to make it to your table again and again!
Menu 2- Pepper Crusted Pork Tenderloin
This easy-to-follow Pepper Crusted Pork Tenderloin recipe uses a simple, wonderfully aromatic cracked peppercorn rub, plus Dijon mustard, to create a delightful main dish that is perfect for family meals or holiday dinners. First, seared in a cast iron skillet to seal in the juices then baked in an oven, this Perfect Pepper Crusted Pork Loin is melt in your mouth tender with a fiery little pepper kick! Serve it with a dark green pear & fig salad and zucchini squash casserole to make the most of the in-season produce this time of year!
