This Week’s Secret To Success
- This week, I’m making the most of Easter leftovers to create new and delicious meals!
- Layered Muffuletta Salad and Ham & Pineapple Dip is perfect for using up leftover ham.
- While Spinach Salad with a Hot Bacon dressing will use the last of those Easter eggs.
- And for those of you who had pot roast for the holiday, why not whip up some Roast Beef Po Boys?
- I buy a 1- ½ pounds of bacon, cook and chop it all at once so I have bacon for the beans and for the spinach salad. If you have a lot of leftover ham, you can skip the bacon and use ham in those recipes instead.

In The Know
Not having the right tools might be the reason you don’t like cooking.
For years, I cooked using whatever I had. Prep took longer and was harder than it had to be. But the biggest frustration was I didn’t always get the end results I wanted.
For the last few weeks, I’ve been sharing some of my favorite kitchen tools that have made cooking so much quicker and easier. They help me get the kinds of results I want, and that makes cooking SO MUCH MORE SATISFYING.
Here’s what I’ve shared so far:
- the first knives I bought
- the cutting board I still use
- this oil to care for it, wooden spoons and anything with a wooden handle
- bench scraper/knife. It makes transferring chopped veggies, fruits and nuts from the cutting board to bowl or cooking pot SO QUICK & EASY!
- 8 cup mixing bowl with a spout. I measure ingredients in it; it’s a constant for mixing and prepping almost every recipe.
- a good box grater. It’s size and sturdy shape making grating through a block of cheese an easy 30 second- 1 minute job. It’s also easy to clean by popping it into the dishwasher.
- 12 inch cast iron skillet. They’re easier to care for than you think, and they hold and distribute heat better than anything else you can buy.

Menu 1- Roast Beef Po Boy
A Roast Beef Po Boy is a Louisiana favorite, chock full of rich, fall-apart beef roast bathed in its own debris gravy, wrapped in crispy, light French bread and dressed to the nines with creamy horseradish, lettuce, tomatoes and Provolone cheese. This is a perfect dinner option if you have leftover pot roast.
Menu #2- Layered Muffuletta Salad
Give that leftover Easter ham a whole new identity with this Muffuletta Salad! It has all the rich flavors of the classic New Orleans sandwich in an easy layered salad with homemade dressing! Serve it up with a pan of baked beans and short cut pull apart rolls for an simple meal loaded with flavor!
Dessert This Week
Enjoy bold lemony flavor with this easy Lemon Monkey Bread recipe & its rich lemon curd glaze.
