Eggs in a Basket, also known as Egg in the Hole, combine all the yumminess of an egg and toast breakfast in a one bite without all the hassle of making separate dishes- breakfast sandwich par excellence.  This is twice as true when you add sausage and cook several at a time on a sheet pan right in your oven!  No more standing over the stove with spatula and skillet.  With this easy recipe, you can make enough Eggs in a Basket for the whole family at once.  And you can do something else while they bake right up to perfection!

3 eggs in a basket on red plates ready for breakfast.

Eggs in a Basket Scripture -John 1:14

What You Need To Make Eggs in A Basket with Sausage

  • sliced sandwich bread
  • large eggs
  • precooked sausage patties
  • shredded cheddar cheese
  • salt, pepper, parsley (optional)
  • cooking oil or non stick spray
  • cookie sheet, round cookie cutter

Sandwich bread with hole removed and filled with sausage and egg.

When my daughter was little, she would ask me why these breakfast delights were called Eggs in a Basket.  It was a great recipe to let her help with.  She would cut out the centers of the bread with a round cookie cutter, and I would explain that we were making little bread baskets to put our eggs in.

Once, she got a little thoughtful, then said “I don’t think a basket with a hole in it is a very good idea.”  What could I say?  Out of the mouth of babes.

I have no idea where the name Egg in a Basket came from, but I hear there are over 66 different names for this perfect breakfast dish.  And whatever you call it or whether your basket has a hole in it or not, one things is for sure.  You’re going to love the ease of whipping up this recipe on a sheet pan instead of standing over the stove!

Oh Stacy! This brought back wonderful memories of growing up in Pennsylvania smack dab in the middle of York and Lancaster county Amish country. They were called Toad in the Hole. My Grandpa raised Banty chickens so there were usually 2 “toads” in the hole. Adding sausage and baking on a sheet pan is genius! But don’t discard those cutout centers! I lightly butter both sides and cook with the Toads. Then either put a little sprinkle of cheese on towards the end of baking, or after put a bit of jelly on and have a little breakfast dessert. Thanks so much for sharing your blog. It brings such comfort to tummies and souls.

Hi, Caryn! I loved reading about where you grew up and your Grandpa’s chickens. A double toad! Jackpot! I am so glad this recipe brought back good memories. I really believe that’s what good food is all about- it ties us together! And 100% about the little centers. My son loved to save them, toast them and eat them with a little jelly, but I love the thought of a tiny cheese toast too! Perfect!!
