What You Need To Make Eggs in A Basket with Sausage
- sliced sandwich bread
- large eggs
- precooked sausage patties
- shredded cheddar cheese
- salt, pepper, parsley (optional)
- cooking oil or non stick spray
- cookie sheet, round cookie cutter
When my daughter was little, she would ask me why these breakfast delights were called Eggs in a Basket. It was a great recipe to let her help with. She would cut out the centers of the bread with a round cookie cutter, and I would explain that we were making little bread baskets to put our eggs in.
Once, she got a little thoughtful, then said “I don’t think a basket with a hole in it is a very good idea.” What could I say? Out of the mouth of babes.
I have no idea where the name Egg in a Basket came from, but I hear there are over 66 different names for this perfect breakfast dish. And whatever you call it or whether your basket has a hole in it or not, one things is for sure. You’re going to love the ease of whipping up this recipe on a sheet pan instead of standing over the stove!
Sheet Pan Eggs in A Basket
Ingredients
- 8 slices sandwich bread (I use a slightly sweetened Hawaiian bread.)
- 8 large eggs
- 8 precooked sausage patties
- ¾ C shredded cheddar cheese
- salt & pepper to taste
- parsley to garnish (optional)
- cooking oil or non stick spray
Instructions
- Preheat oven to 400° Fahrenheit. Line sheet pan with a silicon baking mat or coat pan with non stick spray.
- Use round cookie or biscuit cutter to remove center of each slice of bread. Place slices of bread on sheet pan. Discard centers.
- Place one sausage patty in the center of each slice of bread. Gently crack one egg over the center of each slice of bread. Sprinkle each egg with shredded cheese. Add salt & pepper. Bake for 12-15 minutes or until egg reaches desired firmness.
- Remove from oven, sprinkle with parsley if desired and serve.

Oh Stacy! This brought back wonderful memories of growing up in Pennsylvania smack dab in the middle of York and Lancaster county Amish country. They were called Toad in the Hole. My Grandpa raised Banty chickens so there were usually 2 “toads” in the hole. Adding sausage and baking on a sheet pan is genius! But don’t discard those cutout centers! I lightly butter both sides and cook with the Toads. Then either put a little sprinkle of cheese on towards the end of baking, or after put a bit of jelly on and have a little breakfast dessert.
