Monday Menu #199- Tortilla Soup + Taco Stuffed Sweet Potatoes

Tex Mex with a twist is where it’s at! All of the Monday Menu recipes go together in this meal plan to make 1, 2, even 3 main meal ideas this week. Mix, match and make things easy on yourself with Chicken Tortilla Soup, Taco Stuffed Sweet Potatoes and Green Chile Breakfast Strata!

This Week’s Secret To Success

  • This week is all about “mix and match“!
  • Sometimes dinner is just easier for the week when everything goes together. Got leftovers? Reheat them and serve them with the next main dish to give them a fresh look and feel.
  • This also gives you the option of not making a new side dish if you don’t need one!

EXTRA TIPS: Make the Green Chile Rice early in the week. Put it in the bottom of your soup bowl and serve the soup over it! This with a side of cornbread makes a “stick to your ribs” kind of meal that is incredibly delicious!

Make the taco meat for your stuffed sweet potatoes AND your hand pies at the same time. Cover and refrigerate what you don’t use so you’re ready for your next recipe.

Breakfast casseroles are great for making once and having breakfast all week. However, if your schedule demands another dinner idea, serve the strata with a green salad for an outstanding third supper this week!

Menu 1- Chicken Tortilla Soup

Chicken Tortilla Soup is easy to make. It’s bright colors and lively flavors are like a little fiesta in a bowl! It’s pure Tex-Mex comfort food. And around here, when the weather gets cold, I can’t feed my family enough of it. Dip a couple of taco hand pies in that soup and finish it all off with jalapeño cornbread muffins.

If you love tacos as much as I do, get ready to make your regular ol’ taco Tuesday sing with these wonderfully delicious, flavor packed Taco Stuffed Baked Sweet Potatoes.  A little sweet, a lot of savory and loaded with all the things you love about your favorite taco, these stuffed potatoes pack a true flavor punch.  Dinner doesn’t get any better!
