We’re still eating the best with fresh, in-season produce! Spicy Cucumber Salad, Hoppin’ John Black Eye Peas, Peach Fruit Salad are all at their peak tastiness right now. And Cheesy Tuna Noodle Casserole is an old school favorite with a few better-than-ever updates. This week’s dinner ideas are off the charts!

This Menu’s Secret To Success

  • Nothing says family comfort meal like Cheesy Tuna Casserole. This recipe has some updates- all white meat, albacore tuna and a simple homemade cheese sauce. Add frozen English peas for more nutrition.
  • This casserole recipe also makes plenty for leftovers. Use them for lunch the next day or get a 2nd dinner out of them!
  • Several recipes use the same fruit! This makes grocery shopping easier (no running all around for different ingredients), eliminates wastefulness and makes prepping for meals simple!
  • Lastly, don’t forget to make the most of all that end-of-season produce at the farmer’s markets and roadside stands this week. These recipes use black eye peas, cucumbers, red onion, peppers, blackberries, blueberries, peaches, mint, basil and cilantro.

Menu 1- Cheesy Tuna Noodle Casserole

Creamy delicious goodness is what you get with this easy recipe for Cheesy Tuna Noodle Casserole. Made with a simple homemade cheese sauce, sea shell pasta, tender albacore tuna and a crunchy panko topping, you’ll not find any canned cream soup in this updated version of a classic family favorite! Menu 2- Deep South Hoppin' John

As Southern as it is delicious, this traditional black eyed pea recipe enjoys the rich flavors of pork, bell peppers, onion, celery, herbs and spices served over rice.  Hoppin’ John is comforting, stick-to-your ribs, real kind of food.  It pairs naturally with Cheddar Jalapeño Cornbread Muffins, and we're finishing it off with seasonally sweet Peach Fruit Salad.

If you love fruit pizza, then this beautiful, easy recipe is just for you! A dazzling dessert or a star at brunch, there’s really no time that’s a bad time for this colorful Fruit Tart, with its fresh fruit, cream cheese lime filling, honey lime glaze and sugar cookie crust.

Breakfast Made Easy
