Whipped Coconut & Orange Butter
Equipment
- mesh colander
Ingredients
- 2 sticks butter, room temperature
- 10 oz mandarin oranges, drained
- ¼ C sweetened shredded coconut
- ¼ C powdered confectioner's sugar
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
Instructions
- In a mesh colander, drain the mandarin oranges and discard syrup.
- In a food processor, lightly pulse drained oranges. Drain again in mesh colander. Gently shake colander to remove excess liquid.
- While the oranges drain, pulse butter in food processor until smooth. Add powdered sugar, cinnamon, ginger and coconut. Pulse until smooth. Add oranges. Lightly pulse. Use a spatula to spoon butter into bowl or jar. Chill and serve.
