This week, we’re making lemon chicken two ways- a hearty chicken salad and a creamy lemon rice with chicken casserole! Plus, there’s lots of spring produce for fresh eating- strawberries, carrots, radishes, cabbage, sweet peas and more. These light & tasty meals are sure to be ones that your family asks for again and again!

This Week’s Secret To Success

These meals ideas are all about seasonal flavors. Hello, fresh strawberries and the light spring zing of lemony chicken!

  • Go ahead and buy that flat of strawberries. This week’s recipes can handles it! If there aren’t any flats available in your area, you’ll need at least 3 (16 ounce) cartons of berries.
  • The strawberry slaw is full of spring produce- purple cabbage, radishes, red onion- so much goodness!
  • The chicken for the chicken salad can be cooked and shredded anytime during the week to get a step ahead.

Swaps For Your Family

  • Your family might like Classic Southern Cole Slaw instead of Strawberry Slaw.
  • You can also swap these Seasoned Sweet Potato Wedges for the Carrot Fries.
  • Think broccoli might go over better than a pea salad? Try this Easy Roasted Broccoli!
  • You can also whip up a regular fresh tomato salsa instead of the strawberry fruit salsa.

Menu 1- Creamy Lemon Rice & Chicken

Loads of bright lemon flavor, tender rice, hints of Parmesan and savory boneless chicken thighs guarantee this isn’t your regular chicken and rice casserole! Serve it with a Classic Pea Salad & Rolls with Raspberry Lemon Butter for a Sunday style dinner that's not hard to do!

Easy enough for busy weeknights, special enough for guests, Creamy Lemon Chicken Rice Casserole is melt-in-your-mouth delicious without a lot of fuss!

Classic Pea Salad with Cheese & Bacon

This cool & easy Classic Pea Salad is loaded with bright, fresh flavor! A long time classic made with sweet peas, cheddar cheese, bacon and onion, you’ll love the tasty additions of toasted pecans, diced bell pepper and a sprinkle of lemon zest all wrapped in a creamy dressing.

Raspberry Lemon Butter

There’s not anything that makes a brunch, picnic or family dinner seem more special than a compound fruit butter served with hot rolls. I am hands down a big fan of Raspberry Lemon Butter. Not too sweet and not too tart, this light pink, lemony butter is like pure sunshine melting over pancakes, french toast, even Easter dinner rolls!

Menu 2- Tasty Lemon Chicken Salad

Not your average chicken salad recipe, this savory hearty recipe is made with bright, lemony chicken, red bell pepper, chopped black olives, and seasoned with a sprinkle of celery seed.  Delicious on a sandwich, with crackers or just by the forkful, this is one easy recipe that will soon become a family tradition! This week, we're serving it with Parmesan Carrot Fries and Strawberry Coleslaw for a weeknight family meal that's spring time on a plate!

There are tons of chicken salad recipes out there.  But this recipe is a horse of a completely different color.  It’s savory.  It’s hearty without being heavy.  It’s absolutely addictingly delicious.  And my family asks for it all the time.

Garlic Parmesan Carrot Fries

Everyone loves to dip and enjoy crispy, seasoned fries. But those fries don’t have always have to be of the potato variety! Carrots make fabulous fries. Tossed in a little olive oil, Parmesan cheese and just the right seasoning, carrots bake up to be slightly sweet, crisp delights!

Crisp & Cool Strawberry Coleslaw

You are going to love this light and fresh twist on traditional coleslaw! Cool strawberries, cucumbers and cilantro mix it up with crunchy cabbage, radishes, celery and a little kick from red onion and a jalapeño pepper in this fun Strawberry Coleslaw recipe. Snack of the Week

This easy recipe for Strawberry Salsa with Avocados is both sweet & just a little spicy.
