Monday Menu #322- Poppy Seed Chicken + Chicken & Rice

Nothing sets the tone for an easy week like classic chicken casseroles! And I’ve got some REAL family pleasers in the meal plan lineup this week. Creamy Spinach Artichoke Chicken & Rice is a great way to sneak some veggies in, while Classic Poppy Seed Chicken shines with cozy fall side dishes!

This Week’s Secret To Success

Fall comfort food is what it’s all about this week! We’re creating meals that share ingredients to make shopping and preparation easier. The bonus? It also makes dinner quicker!

  • Let chicken do all the heavy lifting for you this week.
    • Buy a large package of boneless, skinless chicken breasts to save a few a bucks this week. Buying in bulk is always a cheaper price per pound.
    • Boil and shred all the chicken at once so when meal time rolls around, you’re ready to go.
    • Don’t want to cook your chicken? Buy 2 cooked rotisserie chickens at your grocery store to use for your casseroles instead! Just remember, to have enough chicken, you’ll have to use the white AND the dark meat. If you’re not a dark meat fan, this is an important detail!
  • Both casseroles can be cooked in the crock pot for extra convenience!

Getting The Most From This Menu

  • The baked pumpkin donuts and the apple cider cheese fondue included as this week’s snack and dessert are really fun foods to share with friends! Host a little impromptu gathering. Make it super casual. Enjoy the weather. Watch a ballgame. Use it as valuable time to catch up.

How I’m Setting My Table
