This savory breakfast casserole has everything your family needs to fuel up for the day- fluffy eggs, sausage AND bacon, stick to your ribs potatoes + delicious melted cheese. Throw in a few green onions and a little bell pepper for flavor and you have a meal that just won’t let you down (even if you serve it for supper)!

Short Cuts
Using the pre cooked sausage crumbles is a fantastic short cut. You can find them in breakfast meats cooler of many grocery store.
You could also use bacon pieces (usually found on the salad aisle of the grocery store) instead of frying up and chopping thick sliced bacon.
Cubed ham is also a nice short cut/substitute for the bacon or sausage, if your family likes ham or if you have leftover holiday ham you need to use!
How To Make Breakfast Hash Brown Casserole
Prep. Spray a 9×13 or large casserole dish with cooking spray. Preheat the oven to 375° F. Cook bacon in a skillet or in the oven. Rough chop and set aside.
Meat & Veggies. In large mixing bowl, toss together frozen hash browns, bacon, sausage crumbles, bell pepper and 2 C cheddar cheese, making sure all the hash browns are broken apart. Pour into casserole dish.
Egg Mixture. In another large bowl, whisk eggs, half & half, Worcestershire, ground mustard, salt & pepper together until light and fluffy. Pour evenly over hash browns. Top with remaining grated cheddar cheese.
Bake. Bake in preheated oven for 40-45 minutes or until golden brown and set. Cool for 5 minutes & top with green onion (they add such great fresh flavor) before serving.
Crockpot Instructions
This casserole converts well into an overnight slow cooker/ crockpot recipe!
Simply assemble according to recipe in a 5-6 qt. slow cooker. Cook on low for 7-8 hours overnight for a ready made breakfast when you wake.
If you put it in the crockpot in the morning, you’ll have dinner ready when you get home!
