Chicken is the star this week, but forget about boring or bland. We’re talking Green Chile Chicken Salad and Chicken Cordon Bleu Casserole! Loaded with plenty of flavor and all the things that make a meal special, your family is going to love this week’s Monday Menu meal ideas, and you’re going to love the tips for getting it done!

This Week’s Secret To Success

  • This week is all about “variety“!
  • Sometimes we get in a rut, not just serving the same recipes over and over, but serving the same KINDS of foods over and over– a meat+2 every day or casserole, casserole, casserole. And that can make dinner something everyone gets burned out on.
  • One way to make meal time something everyone looks forward to again is thinking about mixing traditional “sit down” style meals with lighter, more casual meals.
  • Mix it up, keep them guessing, and you’ll have your family racing to get back ’round the table again!

EXTRA TIPS: Cordon Bleu Casserole can be made the night before! The post also has some shortcut tips, so don’t miss those.

If you meal prep, slice, dice and chop what you can for these recipes ahead of time, even make the bacon.

If you want to sub in store bought rolls, guac and tortillas to make this meal plan even more convenient, feel free. I totally get “making it work” when time runs short.

However, I can’t say enough about the flavor of the homemade options, especially the guacamole and tortillas. And surprisingly enough, you can make the tortillas in about 15 minutes.

Menu 1- Chicken Tortilla Soup

Chicken Tortilla Soup is easy to make. It’s bright colors and lively flavors are like a little fiesta in a bowl! It’s pure Tex-Mex comfort food. And around here, when the weather gets cold, I can’t feed my family enough of it. Dip a couple of taco hand pies in that soup and finish it all off with jalapeño cornbread muffins.
