Monday Menu #180- Crab Cakes & Old School Taco Salad

Want to make great meals without spending a lot of time in the kitchen this week? It’s easy with this week’s cool summer meal line up! Crab cakes, simple salads, guacamole… It’s all about real deal deliciousness that is easy to pull off!

This Week’s Secret To Success

  • This week is all about easy, cool summer meals that deliver loads of flavor with very little cooking, and all the recipes work so well to make together in the same week!
  • Menu #1 has 2 no-cook side dishes while Menu #2 only requires you to brown some ground beef and make easy cornbread muffins in the way of cooking.
  • Additionally, the fresh guacamole and the chilled avocado soup share almost ALL of the same ingredients, making grocery shopping very easy and convenient.
  • The lemon cookies are a short cut recipe that uses cake for amazing results.
  • And the quiche can be served as breakfast, lunch or dinner!
  • All in all, this is a great menu line up, and it’s one I’m going to use quite a bit this summer!

Real Success Happens Around the Table

A successful meal isn’t just about tasty or convenient recipes. It’s also about what happens at the table.

Menu 1- Crab Cakes & Cool Sides

Crisp outsides and delicate sweet crab insides, Louisiana Crab Cakes are loaded with flavor and pan fried to a golden brown to create a classic southern seafood favorite anyone can make! Serve them on their own or on buns as crab cakes sandwiches. We're making it a meal with chilled avocado soup and a spicy cucumber salad!

Menu 2- Catalina Taco Salad

This retro Catalina Taco Salad shows up frequently on our summer menu because it’s quick and easy and doesn’t leave you feeling stuffed. Full of crunchy Fritos,  ground beef seasoned just right, Ranch Style beans, and tangy Catalina Dressing, it makes an incredibly good complete meal too. It’s a serious favorite here. Serve it with fresh guacamole and cornbread muffins to satisfy the hungriest of appetites!

Dessert This Week

Calling all my lemon lovers!  These light and lemony sweet, Lemon Drop Crinkle Cookies are just for you!  These pretty little bites of sunshine are just bursting with that sweet tartness that puts the pucker in all good things lemon!  Plus, with just 6 ingredients, these crinkled classics are so easy to bake, they’re sure to become your new favorite lemon dessert.

Making Breakfast Easy

This easy breakfast BLT Quiche isn’t just for mornings; it’s perfect for lunch and dinner too! Loaded with bacon, tomatoes, spinach, green onions, feta and cheddar cheese, it’s one heckuva BLT!

What We’re Snacking On This Week

Chocolate-covered Potato Chips are true sweet & salty heaven- crispy, crunchy and delightfully chocolatey.  But these little chocolate dipped numbers here take that concept to a whole new level!  Bathed in rich dark chocolate and topped with bacon & coconut, these potato chips are the extra of the extra when it comes to snacking.  It’s impossible to eat just one!
