Make the most of meal time this week with the meal planning strategies and recipes from Monday Menu! 2 complete meal ideas with recipes, plus everything you need to make an easy hot breakfast, an anytime snack and a yummy dessert.

Classic 3 Cheese Manicotti, Skillet Roasted Asparagus and a fruit salad bring the Sunday dinner feels while Crock Pot BBQ Chicken Thighs, Creamy Dill Potato Salad and Street Corn Foil Packets bring the easy!

A collage of recipes that create 2 family meals that balance time in the kitchen this week.

This Week’s Secret To Success

It’s not enough to think just about what tastes good together when planning a meal (that’s a given!). You and I also have to think about which recipes are going to balance our time and energy in the kitchen so that cooking actually works with our schedules and isn’t requiring time and energy we don’t have.

This week’s meal ideas were put together using a few planning strategies I can’t live without! Having these strategies in my back pocket when I’m thinking about what to make + when to make it helps me make smart recipe choices.

  • Classic 3 Cheese Manicotti hits the spot when it come to cheesy, saucy comfort food. And it has that “sit down” feel that makes sure everyone gathers around the table. But it does take time. Make sure to balance it with a quick and simple side dish like Skillet Roasted Asparagus so you don’t wear yourself out.
  • And since you’ve put in the time stuffing those manicotti shells, the rest of the week needs to be a breeze. That’s when easy cooking methods like crock pot cooking and foil packets become your best friends. Use them to whip up a meal of Boneless BBQ Chicken Thighs and Easy Mexican Street Corn.
  • And don’t forget breakfast. An overnight breakfast casserole is for more than just the holidays. It’s a lifesaver during the week. Cook once and have a quick and delicious breakfast all week long!

How I’m Setting My Table This Week

A successful meal doesn’t end when you pull that main dish from the oven. It finishes with some quality time around the table. Some might even say that’s when the real fun begins!

Here are some of the things I’m using to set my table this week to make the most of our dinner time together and honor all that work I put into making a delicious meal. How are you setting your table?

  • Godinger 16 piece Dinnerware Set– These are the everyday dishes I use the most.
  • Bamboo 20 piece Flatware Set– These are my go-to for outdoor dining, but I’m using them this week inside!
  • Ocean Blue Lattice Dinner Napkins by HenHouse Linens
  • Lemondaisy Design Dachshund Cocktail Napkins
  • Kate Spade Salt & Pepper Shakers
  • Kate Spade Soup/Dessert Bowls
  • Hobnail Drinking Glasses, 13 oz, Set of 6
  • HenHouse Linens Citron Reversible Placemats

Menu 1- 3 Cheese Manicotti

Classic 3 Cheese Baked Manicotti is the best of what good pasta dishes are all about!  And it’s not all that difficult, if you know one easy secret that I'm sharing in this recipe! Pair it with a fruit salad and roasted asparagus for a true comfort food meal this week.

Menu 2- BBQ Chicken Thighs in the Crock Pot

Who can resist juicy, tender BBQ boneless, skinless chicken thighs cooked with the ease of the slow cooker?  Hands-off cooking has never been so easy or delicious!  You're going to love it with Creamy Dill Potato Salad and Mexican Street Corn Foil Packets.

Dessert This Week

Cherry Coca-Cola Jello Salad is a sparkling dessert fruit salad with delightfully intense flavors of a cherry coke float. Punctuated with juicy, tart cherries, bright pineapple, crunchy pecans and light flakes of sweetened coconut with a pop of fizzy Coca-Cola & a cream cheese whipped topping, jiggly jello has never been so fun… or delicious!

Coca-cola jello salad is perfect for the holidays, but also potlucks, cookouts and Valentine's Day in individual serving dishes.

Making Breakfast Easy

This Banana French Toast Bake has layers of luscious caramelized bananas and rich, buttery croissants bathed in delicious egg custard and topped with crunchy frosted corn flakes! This special brunch casserole combines all your breakfast favorites in one delicious, easy casserole.

Here’s What We’re Snacking On

Hawaiian Popper Crescent Rolls combine the goodness of jalapeno poppers and soft, warm crescent rolls! It’s hard to resist the buttery, flaky goodness of a crescent roll that has been baked up just right. But fill it with cream cheese, jalapenos, pineapple and cocktail sausages and you have party food that your friends and family just can’t pass up!

Jalapeno poppers in a crescent roll make a great snack.
