I love a good chicken cordon bleu. There is just something about a thin chicken breast wrapped around ham and cheese, breaded then pan fried. But when life is too busy for that, we can still have all those same incredible comfort flavors and textures in a cheesy pasta! I would say thats a definite win for getting dinner on the table!
The same goes for a burger! When the weather just isn’t prime for grilling or you just don’t have the time or energy, burgers can still be your thing with a simple broiler burger recipe. 12 minutes under the oven’s broiler gives you just enough time to put together a layered cornbread salad on the side.
This Week’s Secret to Success
- We’re making the most of fruit this week. Buy twice what you need for the fruit salad, and you’ll be ready for fruit dipping at snack time!
- Leftover cornbread salad makes for a great “no prep” lunch the day after.
- Make the most of cook times when you need to get a meal on the table. While your casserole is baking, chop and make your fruit salad. While your cornbread is baking, prep your burgers. Then put that salad together while the burgers are under the broiler.
- Half the cake recipe to make a smaller cake or a single layer 9×13!

Here’s What We’re Snacking On
To make the most of the fruit we’re buying for the fruit salad, I am making a quick marshmallow fruit dip for all those in-between times when we get hungry and need a little pick me up- late afternoons and pretty much all weekend long. We even find ourselves snacking on this fruit dip in the evenings (when cake feels like too much).
Making Breakfast Easy
These are the BEST apple muffins! They are completely, 100%, leisurely Saturday morning with a cup of coffee, coffee cake kind of extra- warm, cozy and everything an apple recipe should. But most importantly, these apple muffins are easy to make! With a recipe similar to Monkey Bread, these pull-apart apple muffins bake up in their own caramel sauce & are filled with apple pie filling, cream cheese & pecans.
