Summer is all about cookouts and get-togethers, hanging in the backyard, swimming, and laughing until your sides hurt.  But when planning summertime menus, it’s easy for me to get stuck in burgers and dogs ruts-ville… because I love them so darn much.  SONY DSC

There is hardly anything better than a juicy cheeseburger cooked just right over an open flame (medium to barely medium well, please), but sometimes I need to mix it up a little and have something other than the same ol’, same ol’.  So this year, when planning our 4th of July menu, I felt the need to get coastal. SONY DSC

I’ve got crab cake sliders with remoulade, coleslaw, and parmesan corn on the cob in the works.  Yes sir, Uncle Sam, it’s your birthday, and crab cake sliders are sure to hit the spot.  Not to mention, I’m about due for a good beach vacation anyway.SONY DSC

I’ve shared the crab cake and remoulade recipes below, along with several pics of the serving table.  Happy 4th!


 

Crab Cake Sliders

IngredientsSONY DSC

  • 12 mini, or slider, buns (Potato or sweet buns are yummy options.)
  • 1/2 C mayonnaise
  • 2 Tbsp. butter, melted
  • 1 large egg, beaten
  • 1 tsp. Old Bay Seasoning
  • 1 tsp. Worcestershire sauce
  • 1 tsp. whole grain mustard
  • 1/4 tsp. salt
  • 1 lb. lump crab meat, shells picked out
  • 1/2- 1 C finely crushed crackers (multi-grain club crackers recommended)
  • 3 green onions, finely diced
  • 1/2 C finely chopped red bell
  • flour for dredging
  • oil for frying

Condiments:

  • 6 strips thick sliced bacon, cut in half and cooked
  • sliced red onion
  • sliced avocado (optional)
  • sliced tomatoes
  • green leaf lettuce
  • remoulade (recipe below)
  • hot sauce

Procedure:

Heat oil in a cast iron(or other deep) skillet over medium heat.

Mix all of the ingredients together in a medium mixing bowl (except the flour ).  The recipe calls for 1/2 to 1 C of crushed crackers.  This allows for adjustments in case the mixture is too wet.

Form small patties (the size of your buns) using the crab mixture. Gently dredge patties through the flour, covering both sides.

Carefully place the crab cakes in the hot oil.  Cook 4-5 minutes.  Gently turn the cakes over and cook until golden brown.

Remove the crab cakes from the oil and let drain on a paper towel.  Assemble your sliders using the desired condiments.

Ingredients:

  • 2/3 C mayonnaise
  • 4 Tbsp. whole grain mustard
  • 2 Tbsp. chives, finely minced
  • 2 Tbsp. flat-leaf parsley, finely minced
  • 2 Tbsp. fresh dill, finely minced
  • 2 Tbsp. white horseradish, drained
  • 1 Tbsp. ketchup
  • 2 tsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1 tsp. paprika
  • 1/2 teaspoon salt
  • 1/2 tsp. sugar
  • 1/8 tsp. black pepper

Procedure

Combine all ingredients.  Mix until smooth.
