St. Patrick’s Day is always lots of fun, and this year we’ve got some comfort food favorites to help you create Southern-inspired St. Patty’s Day meals everyone will love!

This Week’s Secret To Success
It’s no surprise that this week’s menu relies heavily on potatoes, but also a lot on cheese! I’ve got a breakdown and swaps to make shopping easier.
- Swap the red potatoes in the Cottage Pie for Yukon Golds. They are what the stew uses also. A 5 pound bag should be plenty for both recipes.
- The potato pancakes really need Russet potatoes for the best results, but you can also make them with sweet potatoes (which might just be my favorite way to make them!) The stew uses sweet potatoes too! You’ll need 6 sweet potatoes for both recipes.
- Tweaking the recipes this way will keep you from feeling like you are buying every potato in the store (Russets, red potatoes, Yukon Golds, sweet potatoes and frozen hash brown potatoes) and also increase the likelihood of using everything you buy!
- One pound of thick cut bacon should be enough for the cabbage and the pea salad this week.
- 2 (16 ounce) blocks of sharp cheddar will cover all the recipes this week! 1 block grated = 4 cups of shredded cheese.

Menu 1- Beef Stew & Cabbage

Menu 2- Southern Cottage Pie
Instead of Shepherd's pie, try this Southern Cottage pie for dinner! A double crust dinner pie loaded with savory ground beef, tender new potatoes and a melt-y cheddar cheese sauce, Southern Cottage Pie is the epitome of hearty family comfort food. It’s way easier than you think! Round it out with Honey Glazed Carrots and 7 Layer Pea Salad for a meat and potato meal with all the veggies.
