Does your family love comfort food that’s easy? Then these meal ideas are for you! My family’s super easy, flavor-loaded gumbo recipes never disappoints. Plus, an easy quiche with a secret ingredient makes for a low key dinner that always rates high on the “satisfied” scale! And, I’ve got tips and options, not to mention breakfast, snack and dessert all queued up!

This Week’s Secret To Success
We’re bringing serious flavor to the table this week with recipes that are going to surprise you with how easy they are! Plus, there are plenty of options so you can customize the meals to fit your schedule and your family’s taste buds.
- My family’s gumbo recipe doesn’t take long to make. It’s cooked all in one pot and flavors are built by adding ingredients a little at a time.
- Don’t feel up to making the hush puppies? (They are a reader favorite!) Just skip them. Gumbo is a complete meal by itself!
- Want a real taste of Louisiana? Trade in the rice for a dollop of potato salad with your gumbo!
- If you have the time, you can also use this gumbo recipe to invite friends over this weekend. Here is my complete guide with a few more recipes to a casual Gumbo Get-Together.
- Gumbo also makes plenty of leftovers. Plan to have those on your busiest day this week.
- Quiche is also an easy meal. Save it for later in the week when energy levels might be running low!

Getting The Most From This Menu
- If your family doesn’t like seafood, gumbo is still a great option! Trade the shrimp for a rotisserie chicken that you simply shred and add to the pot at the end of the recipe.
- Amp up your breakfast by serving Green Chile Sausage Balls with your apple bread. It’s the perfect fall combo!
How I’m Setting My Table
Tasty & convenient recipes are only half of any dinner equation!
Having a few things at the ready that you really love to set the table with is THE KEY to making meal time enjoyable and inviting others over stress free.
Here are a few early fall favorites! Load up the vase with sunflowers for a cheery seasonal table you’ll enjoy every time you pass it this week.

Menu 1- Gumbo
You’re going to love my family’s authentic Louisiana gumbo recipe with a simple, nutty blonde roux, shrimp, sausage, okra and yes, even a few Creole tomatoes. Loaded with layers of deep flavor and served over a spoon or two of extra tasty Green Chile Rice or Southern Potato Salad (for a real Louisiana treat) , this is one pot comfort food you’ll love no matter where you live!
Menu 2- Secret Ingredient Ham & Swiss Quiche
This Ham & Swiss Quiche has a super common secret ingredient that makes for a creamy, silky quiche every time! AND it makes an EASY, but really flavorful, dinner when paired with my Garden Salad + Lemon Parmesan Vinaigrette.
Dessert This Week
Pulling a pan of fresh, soft homemade Peanut Butter Cookies with their comforting, buttery-rich aroma from the oven is like holding a batch of childhood memories! Simple, classic and everything you remember, you’re going to love this easy recipe that delivers soft peanut butter cookies with their signature crisscross design.

Breakfast Made Easy
Tender, with a moist crumb and a sweet, crisp crust, loads of chunky apples and buttery walnuts, this easy Cinnamon Apple Quick Bread is drizzled with a cinnamon glaze and filled with all the warm flavors and welcoming aromas you’d expect from an old fashioned recipe!

Snack of the Week
Get ready for your new favorite snack recipe! A little smoky, a little sweet, loads of savory and super easy, these salty Honey Spiced Pecans are completely addictive. Made unbelievably delicious with a simple mixture of honey, garlic, Worcestershire, cayenne & cumin, there’s no way to eat just one!
