Monday Menu #310- Ham Salad Sandwiches & Layered Melon Salad

Summer always calls for some deliciously fresh, “cool kitchen” meal ideas. But can it also deliver tasty soup, salad and sandwich combos at the same time? You bet! This week, we’re whipping up a chilled strawberry bisque, chunky ham salad sandwiches and Spicy Watermelon Salad… and did someone say house made Zucchini Chips?? Yeah, we got those too.

This Week’s Secret To Success

  • The recipes in this week’s meal plan are perfect for making in the same week together! They share lots of the same ingredients, making grocery shopping and prep easy and efficient!
  • I’ll be looking to my local farmer’s market for ingredients like melons, strawberries, jalapeños, cucumbers, zucchini, red onion, honey, cilantro, basil and mint.
  • This week focuses on “cool kitchen” meals, perfect for summer!

Getting The Most From This Menu

Who says soup, salad and sandwich meals are just for winter? Summer has its own take at this classic combo!

  • Purchase special bread to set Meal 1 apart from just your basic lunch sandwich- croissants, Hawaiian buns, maybe a fresh loaf of sour dough from the farmer’s market. 
  • Make the zucchini chips with the ham salad sandwiches and Spicy Watermelon Salad for a delicious house chips, salad, sandwich meal.
  • Use the chilled strawberry soup with the melon salad for a summer twist on a soup and salad meal.
  • Have leftover ham salad? Go for a summer soup, sandwich, salad meal with house chips.
