This week’s meal ideas are all about cozy comfort food! We’re using the crock pot and getting a jump on our holiday treats to make life easy. I know you’re going to love these Italian Stuffed Eggplant Boats with sausage and wild rice just as much you’ll love a big bowl of short cut potato soup with a slice of muffuletta crescent ring sandwich to dip!

This Week’s Secret to Success
The weather is chilly and it gets dark early, but we aren’t going to let that stop up from getting cozy comfort food on our tables! So this week, we’re giving our slow cookers a work out while embracing the season.
- We’re using the crock pot to cook soup while we’re busy with our days and breakfast while we sleep!
- Go ahead and get started on that holiday baking. Pralines freeze & thaw wonderfully, and will taste great on Christmas Eve and Day. They also make great gifts. Just use wax paper between layers if you have to stack them to freeze, store or give.
Menu 1- Slow Cooker Potato Soup with a Short Cut
Peeling potatoes is a real downer when it comes to making tasty homemade potato dishes…. Except for this super easy Slow Cooker Shortcut Potato Soup! It’s packed with all the yummy flavors of a loaded baked potato soup but none of that peeling and dicing that usually comes with it. The secret? It's made with frozen hash browns! Couple that with the ease of crock pot cooking and you have a hot meal that's sure to be a convenient favorite. Serve it with a fun muffuletta crescent ring sandwich and a green salad for a satisfying meal.
Menu 2- Italian Stuffed Eggplant
Intensely flavorful, this savory Italian Stuffed Eggplant recipe is made from roasted eggplant filled with a comforting, hearty mixture of spicy sausage, brown rice, diced tomatoes and Parmesan cheese, all topped with a crispy Panko topping. Super cozy, this dish is delicious with sauteed green beans for the perfect comfort meal.
Dessert This Week!
Wonderfully indulgent, Louisiana Pralines are all about buttery southern pecans wrapped in blankets of rich, soft, fudge-like caramel candy made from brown sugar, cream, and butter. A true, easy-to-make southern tradition, Pralines are the perfect Christmas candy! Start this week to get a jump on your Christmas treat making. Pralines make ideal gifts too.
