Seasonal eating with figs this week, plus plenty of cheesy, pasta comfort food! Monday Menu puts together recipes for you so that you don’t have to stress about what to make this week while still eating really well for every meal! Look for all the fall flavors in these dishes.
This Week’s Secret to Success
This week’s meal ideas capitalize on seasonal and shared ingredients for the win!
Why is buying produce in season important? In-season fruits and vegetables are packed with intense flavor and more nutrients that just aren’t there any other time of the year.
They are grown in their own natural environments with plenty of sunshine and the type of weather they love. As a result, they are usually plentiful which also makes them easy to find and less expensive than at other times throughout year.
- It’s fig season in the south and southeast, so we’re making the most of it! Both the Bacon Fig Flatbread Pizza and it’s accompanying pear salad use figs to create rich, earthy seasonal dishes that are sure to remind you why we all love fall so much!
- The fig flat bread, the roasted cabbage and the cauliflower soup use Parmesan cheese for a salty balance and richness. Buy one wedge and shred your own or spend less per ounce by buying a larger bag of shaved Parmesan cheese.
- Buy one bag of match stick carrots and use practically all of it between your soup and in your salad. If you happen to have any leftover, throw them into the Beef Ravioli Bake for a little something extra!
Menu 1- Beef Ravioli Bake
Cheesy, comforting One Dish Beefy Baked Ravioli is a quick & easy meal with velvety cheese filled pasta smothered in a simple, hearty beef & sausage red sauce that’s conveniently prepared and baked up bubbly in just one dish. Every single family member is guaranteed to love it!
Menu 2- Bacon Fig Pizza
If you love a warm biscuit piled high with sticky sweet figs and topped with bacon, then this, my friends, is absolutely the recipe for you! Tantalizingly sweet & savory, Bacon Fig Pizza is topped with dried (or fresh) figs, fig preserves, chopped bacon, goat cheese and shaved Parmesan. A true comfort food, this wonderful flat bread recipe is perfect for brunch, dinner or as an appetizer!
Dessert This Week!
Chock full of chunky chopped apples and buttery walnuts with just a hint of cinnamon and the right amount of sweetness, this Old Fashioned Fresh Apple Cake recipe is melt-in-your-mouth tender with a perfect, crackly crust on top.
Here’s What We’re Snacking On
It’s time to liven up that queso dip with a little southern flair! Everyone has their favorite crock pot queso recipe, but there is nothing wrong with taking it up a notch or two every now and then. That’s exactly what this recipe with spicy ground sausage, diced tomatoes and green chiles and tender collard greens does. Here’s to fall dips and chips!
Making Breakfast Easy
A sausage egg and cheese breakfast casserole made with croutons? Yes indeed, my friends. And it couldn’t be any easier than with this simple overnight recipe. Store bought croutons, sausage crumbles, cream of mushroom soup, eggs and a bag of shredded cheese- that’s all you need to make breakfast once and be ready to go for the whole week!
