This week’s menu has me thinking about summer! Crab cakes (or crab cake sliders!), potato salad, baked beans and sausage, a lemon cake and so much more! The recipes here create 2 complete family meals, a snack, breakfast and dessert so that you never run out of answers for that age old question, “What’s for dinner!”
This Week’s Secret To Success
This week’s recipes and meal ideas are some of my favorites. Maybe its because, when put together, they get me to thinking about summer!
Strawberry Cream Cheese Sandwiches, Deviled Egg Potato Salad and Southern Sausage and Baked Beans give off that perfect picnic vibe.
While Louisiana Crab Cakes paired with a little Cheesy Broccoli & Rice Casserole and a Strawberry Asparagus Salad have all the feels of home.
These recipes make THE MOST of in-season strawberries. Save yourself some time and money by purchasing a large container or flat of strawberries, washing them and using them all week long. The flavor pay off with sweet, local berries will make this week’s meals beyond delicious!
If you feel like making the Cheesy Broccoli & Rice and the Deviled Egg Potato Salad is too much for one week- since both recipes make enough for plenty of leftovers- just make the one dish your family will like best and use it for both meals.
Being able to swap out recipes to customize these meal ideas to suit your family helps you get something delicious on the table your people are guaranteed to love!
Menu 1- Louisiana Crab Cakes
Crisp outsides and delicate sweet crab insides, Louisiana Crab Cakes are loaded with flavor and pan fried to a golden brown to create a classic southern seafood favorite anyone can make! Serve them as a main dish your family will love or on sliders buns for tasty crab cake sandwiches! Either way, you've got two great side dish recipes here to make a winner of a meal.
Menu 2- Strawberry Sandwiches
Let’s talk gorgeous, easy delicious food that’s perfect for a light and easy dinner! Dreamy cream cheese, ripe strawberries, crisp spinach and salty smoked turkey or ham all piled high on buttery croissants make a delectable little picnic sandwiches that taste even better than they look.
Dessert This Week
One of my very favorite cakes, Triple Layer Lemon Cake carries a punch of real lemon flavor and beams with the color of happy sunshine. This recipe uses a smart cake mix short cut with rich extras like sour cream and more eggs to create homemade flavor and texture. Rich lemon curd is sandwiched between its layers and clouds of lemon curd buttercream is piled high on the top and sides. This cake makes every day a little bit special!
Here’s What We’re Snacking On
Cool, classic Tzatziki meets the salty, garlicky goodness of whipped feta dip in this spectacularly quick & easy Whipped Feta Tzatziki Dip! Creamy, light and full of happy cucumber crunch, this party dip is delicious with chips, soft pita bread and veggies, a go-to for charcuterie boards. It’s also pretty special piled on burgers, sandwiches and all your grilling favorites!
Making Breakfast Easy
Strata simply means layers. And Overnight Green Chile Breakfast Strata is just that—simple layers of flour tortillas, cheese, green chiles, and Canadian bacon, soaked in an egg and cream mixture just before being baked into golden yumminess. The chiles aren’t spicy, and the tortillas soak up the eggs and cream so that they puff up into what is almost a soft pastry. This brunch casserole is a stand out partner to a tasty fruit salad and is one that you will be oh, so glad you tried.
