This week’s meal ideas are family favorites for sure! Whip up some easy Mexican Cornbread Casserole and 2 specially chosen side dishes. Then, treat your family to the ultimate comfort food- Pizza Stuffed Pasta Shells with Green Bean Salad and Olive Cheesy Bread. With a breakfast recipe, a snack and an easy dessert, I’m sharing some tricks of the trade to make it all work!
This Week’s Secret To Success
Both of this week’s family meals have short cuts that make prepping a meal after work or on busy days a snap. Simple little things like using pre-made sausage crumbles and jarred marinara sauce in your pizza bake or cornbread mix and canned creamed corn in your Mexican cornbread make a huge time saving difference without sacrificing flavor.
To save even more time, purchase a pre-cut package of cubed ham for your black eyed peas and a second bag of sausage crumbles for your brunch cake.
Got Leftovers?
Leftover Brunch Cake, a.k.a. sausage, egg and cheese monkey bread AND the Pickled Shrimp can be turned into quick meals. Serve the Brunch Cake with a green salad for lunch or dinner. Toss the Pickled Shrimp in pasta or in a green salad to make your meals stretch even further this week!

Here’s What We’re Snacking On
This scrumptiously easy recipe has gone viral this week! It just doesn’t get more southern than Louisiana Pickled Shrimp in a jar. A long- standing classic appetizer, these plump Gulf shrimp soak in a bright, lemony, Creole seasoned marinade and are delicious served on baguettes, by themselves or as part of a meal tossed in a salad or buttery pasta!
Making Breakfast Easy
The name of this fun recipe should be “breakfast monkey bread”! It’s an easy-to-make pull apart bread put together with pieces of canned biscuit dough, breakfast sausage, eggs and cheese. A complete breakfast with a fancy name, Sausage Egg & Cheese Brunch Cake can also double as dinner!
