- baby, or “little,” potatoes
- butter

How to Make Easy BBQ Potato Foil Packets
It’s hard to beat the soft & tender way baby potatoes bake right up using foil packets. It’s just too easy!

Cheesy BBQ Bacon Potato Foil Packets
Equipment
- aluminum foil
- non stick cooking spray
Ingredients
- 1.5 lb baby gold potatoes, cut in halves
- 4 Tbsp butter
- 6-8 slices thick cut bacon, cooked & rough chopped
- ½ C BBQ sauce
- 1 C grated cheddar cheese, heaping
- sour cream & 3-4 chopped green onions as toppings
Instructions
- Preheat oven or grill to 400° Fahrenheit.
- While oven preheats, tear off 8 approx. 12 inch x 12 inch squares of aluminum foil.
- Spray 4 of the foil squares with cooking spray. Add 1 C potato halves to each sprayed foil square. Top each with 1 tablespoon butter, cut into smaller pieces and dotted around the potatoes. Sprinkle each with approx. 1-1.5 slices chopped bacon and a generous ¼ C cheese. Finish by drizzling each with 1-2 tablespoon BBQ sauce.
- Tent the remaining unsprayed foil squares over each pile of potatoes. Fold edges of foil tops and bottoms together to create a packet. Place all packets on one cookie sheet to cook in oven. If cooking on grill, simply place packets on grill.
- Cook for 30 minutes. Cut foil packets down the center to open. Top with sour cream and green onions and serve.
