The aromas that burst forth when you cut open these little foil packets let you know that your potatoes have bubbled, baked and soaked up loads of taste while all bundled up.  Serve them right in their packets for something out of the ordinary, plus easy clean up later, and you’ve got a family favorite in the making!

What You Need To Make Cheesy BBQ Bacon Potato Foil Packets

  • aluminum foil
  • non stick cooking spray
  • baby, or “little,” potatoes
  • butter
  • thick sliced bacon
  • grated cheddar cheese
  • your favorite BBQ sauce (or make your own)
  • sour cream
  • green onions

How to Make Easy BBQ Potato Foil Packets

It’s hard to beat the soft & tender way baby potatoes bake right up using foil packets.  It’s just too easy! 

  • Spray foil squares with non stick cooking spray to keep your potatoes from sticking to the aluminum foil while cooking.
  • Load your foil with potatoes, then dot them with a pat of butter.
  • Sprinkle with bacon & cheese.  Drizzle with BBQ Sauce.
  • Seal up your packet tightly to keep in all the flavors, steam & goodness as your potatoes cook! 
  • Making these packets assembly line style is the easiest way to get it done quick, quick!  This is also a great way to get family members or little ones involved in making this deliciously cheesy dish.

Of course, you can’t serve them without toppings.  What would be the fun in that?  Use any leftover bacon, plus a dollop sour cream and a smattering green onions to complete the experience  And what a taste experience it is!

Cheesy BBQ Bacon Potato Foil Packets

Equipment

  • aluminum foil
  • non stick cooking spray

Ingredients

  • 1.5 lb baby gold potatoes, cut in halves
  • 4 Tbsp butter
  • 6-8 slices thick cut bacon, cooked & rough chopped
  • ½ C BBQ sauce
  • 1 C grated cheddar cheese, heaping
  • sour cream & 3-4 chopped green onions as toppings

Instructions

  • Preheat oven or grill to 400° Fahrenheit.
  • While oven preheats, tear off 8 approx. 12 inch x 12 inch squares of aluminum foil.
  • Spray 4 of the foil squares with cooking spray. Add 1 C potato halves to each sprayed foil square. Top each with 1 tablespoon butter, cut into smaller pieces and dotted around the potatoes. Sprinkle each with approx. 1-1.5 slices chopped bacon and a generous ¼ C cheese. Finish by drizzling each with 1-2 tablespoon BBQ sauce.
  • Tent the remaining unsprayed foil squares over each pile of potatoes. Fold edges of foil tops and bottoms together to create a packet. Place all packets on one cookie sheet to cook in oven. If cooking on grill, simply place packets on grill.
  • Cook for 30 minutes. Cut foil packets down the center to open. Top with sour cream and green onions and serve.
