Mouthwatering cheesy potatoes loaded with bacon & cooked tender in your favorite BBQ sauce with easy foil packets makes the ultimate side dish with no clean up! Perfect for oven, grill, even the campfire!
While oven preheats, tear off 8 approx. 12 inch x 12 inch squares of aluminum foil.
Spray 4 of the foil squares with cooking spray. Add 1 C potato halves to each sprayed foil square. Top each with 1 tablespoon butter, cut into smaller pieces and dotted around the potatoes. Sprinkle each with approx. 1-1.5 slices chopped bacon and a generous ¼ C cheese. Finish by drizzling each with 1-2 tablespoon BBQ sauce.
Tent the remaining unsprayed foil squares over each pile of potatoes. Fold edges of foil tops and bottoms together to create a packet. Place all packets on one cookie sheet to cook in oven. If cooking on grill, simply place packets on grill.
Cook for 30 minutes. Cut foil packets down the center to open. Top with sour cream and green onions and serve.
