If steak dinners are your favorite, you’re going to love this easy and convenient Sheet Pan Steak & Potatoes recipe with green beans. It’s a simple all-in-one meal that’s literally packed with flavor and leaves just one pan to clean up!

Sheet Pan Steak & Potatoes Recipe with Green Beans

Tender, juicy steak, creamy new potatoes and savory green beans cook together in one pan to create an easy meat and potatoes comfort meal that always hits the spot!

Everything is tossed in a simple marinade made with olive oil, Parmesan cheese, lemon juice, garlic and Worcestershire sauce to create that savory steakhouse flavor we all love.

Then the new potatoes and fresh green beans roast in the oven to nearly fork tender perfection. Finally, the steak is added and everything is finished quickly under the broiler for a steak and potatoes dinner that is utterly delicious and convenient. It’s perfect for busy weeknights or weekends!

I thought grilling or a cast iron skillet steak were my favorite ways to cook up a nice steak dinner… but this method takes sitting down to a simple meal to a whole new level.

  • There could not be an easier way to get a delicious meal on the table than this recipe. It is SO tasty and easy.
  • The steak, potatoes and veggies are all flavored with the same marinade and cooked in the same pan, so we’re talking simple.
  • One bowl, one pan. That’s it! So clean up is a snap too.
  • And you know that flavor is going to be on point. Well seasoned, savory, full of flavor. Serve it with a little Ranch dip for the veggies, if you want.
  • It’s versatile. I’ve got suggestions for switching out the veggies to make it seasonal. Make it with chicken or pork chops. You can get a lot of mileage out of this recipe.

Recipe Ingredients & Overview

I’ll walk through an overview of ingredients & steps in these next sections along with helpful tips!

  • steak (I prefer New York strips, but flank and skirt steaks work well too!)
  • baby new potatoes
  • fresh green beans (Frozen green beans are not recommended. See Success Tips.)
  • olive oil
  • freshly grated Parmesan cheese
  • lemon juice
  • minced garlic
  • salt
  • coarse ground black pepper
  • red pepper flakes
  • fresh parsley
  • butter

Recipe Additions & Substitutions: Keep it seasonal by switching out your potatoes and vegetables.

Asparagus and broccoli work great for this recipe in place of fresh green beans. If you choose asparagus, add them to your pan when you add your steak. They don’t take as long to cook.

Choose sweet potatoes, fingerlings or baby Yukon Golds instead of red new potatoes.

Throw in some Portobella mushrooms or onion wedges for extra flavor.

This recipe works will for thin chicken breasts and pork chops too. (Use a meat thermometer for accurate cook times.)

How To Make A Sheet Pan Steak Dinner

Make the Marinade. Add olive oil, Parmesan, lemon juice, garlic, salt and peppers to a small bowl or food processor and whisk or pulse until the ingredients are emulsified.

Marinate Everything. Toss the potatoes in 1 tablespoon of the marinade and spread on a baking sheet. Repeat with the green beans. Add Worcestershire sauce to the rest of the marinade, pour it over the steaks and set them aside.

Roast the Veggies. Place the potatoes and green beans in a preheated 375°F oven to roast for 20 minutes.

Add the Steak. Remove the veggies from the oven after 20 minutes. Make a space in the center of the pan and nestle the steaks between the potatoes and the green beans. Turn the oven to broil and finish the steaks and vegetables under the broiler for 8 minutes.

Finish & Serve. Remove the baking sheet from the oven. Grate some extra Parmesan cheese over everything. Sprinkle the steaks with a pinch of salt each, then top with a pat of butter. Add a little chopped parsley to everything and serve!

Success Tips

  • Steaks will be about 136°F when they come out of the oven.  As they rest, they will finish cooking and be about 140° when you slice and serve. This is a medium rare/medium steak. 
  • If you’d like a more well-done steak, you will need to remove the beans from the pan and broil the steak and potatoes for an extra 2-3 minutes.
  • This recipe doesn’t provide a sear on your steaks, but it does yield a seriously flavorful, juicy steak that’s easy and quick to make.
  • It really is important to finely grate your own Parmesan for the best marinade. The powdered stuff won’t really combine with the other ingredients and will separate later. This is the hand-held grater I use to make the job easy.
  • Frozen green beans don’t work for this recipe. They bring a lot of extra water to the dish, create steam and will make the other ingredients soggy.
  • If you can’t find fresh green beans, or they aren’t in season, try using one of the other suggested vegetables for the best results.

Ingredients

  • 1.5 pounds steak (flank, skirt or strip- 1 inch thick)
  • 1.5 pounds new potatoes quartered
  • 1.5 pounds fresh green beans trimmed

Marinade

  • ¼ cup olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 2 teaspoons minced garlic
  • 2 teaspoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon coarse ground black pepper
  • ¼ teaspoon red pepper flakes
  • 2 teaspoons Worcestershire sauce

Finishes

  • extra salt, 2 pats of butter, freshly chopped parsley

Instructions

  • Preheat oven to 375℉. Spray baking sheet with a non stick spray.
  • In a small bowl or food processor, add olive oil, freshly grated Parmesan cheese, minced garlic, lemon juice, salt, black pepper and red pepper flakes. Whisk or pulse until emulsified.
  • Spread potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of the marinade. Toss until all of the potatoes are coated. Arrange in a single layer on one end of the baking sheet, cut side down.
  • Add green beans to the baking sheet. Drizzle with 1 tablespoon of the marinade. Toss until all of the beans are coated and arrange in a single layer on the other end of the baking sheet.
  • Add Worcestershire sauce to marinade. Whisk or pulse to blend. Pour the rest of the marinade on each side of the steaks. Gently rub it in, and set them aside on a plate to marinate.
  • Place baking sheet with the vegetables in the preheated oven to roast for 18-20 minutes.
  • After 20 minutes, remove the vegetables from the oven. Make a space in the center of the pan and nestle the steaks in between the beans and potatoes.
  • Turn the oven to broil. Place the baking sheet back in the oven to cook the steaks and finish the vegetables under the broiler for 8 minutes. Flip the steaks and toss the beans halfway through.
  • Remove from the oven. Grate some extra parm over the beans, potatoes and steak. Sprinkle the steaks with a pinch of salt each and top with a pat of butter. Sprinkle everything with fresh parsley and serve!
