This week’s meal ideas are easy and relaxed with Baked Creamy Tacos and Farmhouse Egg Salad. Both main dishes are kitchen to the table in just 25 minutes! This Week’s Secret To Success

The “Mix and Match Strategy” answers the question of what to make for dinner this week with flexibility!

  • Since Menu 1 & Breakfast are both Mexican-inspired, they give you some flexibility with using (or reusing) side dishes.
  • If you have leftover rice, add it to your breakfast burritos in place of hash browns so there’s no waste this week!
  • Additionally, leftover Charro Beans can be added to or served with breakfast burritos for a little extra protein.
  • Don’t need a snack? The guacamole is perfect with Baked Tacos and the Breakfast Burritos.

Swaps For Your Family

  • Instead of egg salad, your family might be more excited about Chicken Salad. Try my newest Green Chile Chicken Salad, traditional Apple, Cranberry Chicken Salad or the hearty Lemon Chicken Salad that my menfolk devour!

Getting The Most From This Menu

  • Need more dinner ideas (instead of breakfast)? Make the Breakfast Burritos for supper instead. Use any of the tips above for the rice, beans and/or guacamole.
  • Need a different side? Make our go-to Green Salad with Creamy Mayo Vinaigrette.
  • Serve the Egg Salad and the Soup on separate nights. Add chips and fruit to egg salad sandwiches. Serve Creole Sausage Balls along with the soup & crackers!

Menu 1- Baked Tacos

Baked Creamy Tacos are what easy taco dinners are all about! Crispy taco shells are stuffed with seasoned ground beef made creamy with a bit of cream cheese and topped with tomatoes, onions, jalapeños, shredded cheddar and baked until hot and delicious! Serve it Green Chile Rice and Easy Charro Beans for a restaurant meal at home!

Baked Creamy Tacos

Prep time is approximately 10 minutes. Bakes up in just 15 minutes!

Easy Charro Beans (Mexican Pinto Beans)

Easy Charro Beans are smoky mexican-style pinto beans simmered in broth with rich layers flavors from bacon, tomatoes, chiles and spices!

Easy Green Chile Rice

This Easy Green Chile Rice recipe is richly savory & simmered to perfection in chicken broth with green chiles, onions & just a little butter.
