An easy Baked Taco dinner with all the sides headlines this week’s Cinco de Mayo meal ideas, followed by simple Crock Pot BBQ Beef Pot Roast sliders! Plus, you’re gonna recipes for a quick complete breakfast, a festive snack and 6 ingredient Lemon Crinkle Cookies to keep your family happy all week long!

Plan easy meals with recipes that share ingredients like the ones shown in this collage- Baked Tacos and BBQ Pot Roast with beans, rice, pasta salad and carrot fries as side dishes.

This Week’s Secret To Success

Shared ingredients, dips that can work as side dishes and smart cooking methods make this week’s menu ideas winners!

When several recipes share one ingredient that makes meal prep and grocery shopping so much easier. Instead of running all over the store getting different ingredients, grab 2-3 cartons of cherry tomatoes, enough green onions and taco toppings all in the produce section of your grocery store, and you’ve got what you need for 7 Layer Dip, Creamy Tacos and Bacon Tomato Pasta Salad.

You can also prep all those ingredients at the same time, store them separately in zip top bags, and all your cutting and chopping for all of your meals and snack recipe will be done!

Since this week is Cinco de Mayo, make the most out of your taco dinner and snack by using your 7 Layer Dip as an extra side dish or as a party appetizer before your meal starts.

Lastly, Baked Tacos and Crock Pot BBQ Beef use smart hands-off cooking methods to make your time in the kitchen simple! Cook your BBQ Beef Pot Roast all day in the crock pot while you are at work, running errands or at ball practice with the kids. And when it comes time for tacos, baking them all together in a 9×13 casserole dish is tested and approved as the easiest way to cook and serve tacos to a crowd.

Menu 1- Easy Taco Dinner

Baked Creamy Tacos are what easy taco dinners are all about! Crispy taco shells are stuffed with seasoned ground beef made creamy with a bit of cream cheese and topped with tomatoes, onions, jalapeños, shredded cheddar and baked until hot and delicious! Complete the meal with Easy Green Chile Rice and a side of Mexican Pinto Beans- my shortcut version of authentic Charro Beans.

Menu 2- Crock Pot BBQ Beef Pot Roast

This easy BBQ Beef Pot Roast recipe slow cooks seasoned chuck roast to fall apart tender in a simple homemade BBQ sauce for juicy shredded BBQ beef you can eat on sandwiches or as a main dish. This week, load it up on slider buns and get ready for delicious side dishes like Bacon Tomato Pasta Salad and Carrot Fries!

Here’s What We’re Snacking On

This easy, classic recipe for 7 Layer Dip makes the best Mexican bean dip around!  With creamy sour cream, guacamole & refried bean layers, not to mention salsa and a secret ingredient to boot, this traditional party dip is perfect for celebrating Cinco de Mayo this week or as an extra side dish for your Taco Dinner.

Making Breakfast Easy

Eggs in a Basket, also known as Egg in the Hole, combine all the yumminess of an egg and toast breakfast in a one bite without all the hassle of making separate dishes- breakfast sandwich par excellence.  This is twice as true when you add sausage and cook several at a time on a sheet pan right in your oven!  No more standing over the stove with spatula and skillet.  With this easy recipe, you can make enough Eggs in a Basket for the whole family at once.  AND you can do something else while they bake right up to perfection!
