This week has nothing but easy deliciousness in store for you with these easy family meal ideas! Shredded Buffalo Chicken Sliders and a classic layered salad create a zero fuss meal, while Hearty Sausage Potato Soup and 2 side dishes put the comfort in home cooked comfort meal!

Some days just need a meal that requires almost zero time in the kitchen. And that’s just what you get with this week’s Shredded Buffalo Chicken Sliders! Use a rotisserie chicken from your grocery store to make everything simple, layer up a classic pea salad and throw in your favorite potato chips for a tasty hot meal your family will want you to make ALL the time!

Follow those sliders up with an anything-but-average potato soup. Loaded with sausage, bacon and just a bit of kale, this recipe was inspired Zuppa Toscana, an Italian potato soup, that is guaranteed to keep everyone toasty and satisfied!

This comfort meal is rounded out with a skillet roasted asparagus and olive stuffed cheese bread- a reader favorite recipe!

This Week’s Secret To Success

One of my favorite rules for menu planning is to balance hard tasks with easy ones… or better yet, tasks that take more time with simple tasks that can be done quickly! I call them “big asks” and “little asks.”

Don’t load up your week with a bunch of “big asks.” When your schedule gets busy and obligations pile up, you’ll be more likely to bail on a home cooked meal if you’ve asked too much.

This week balances time in the kitchen between a quick hot sandwiches and a comfort soup that’s simple to make but requires more time. This balance keeps cooking a joy and not a chore. There shouldn’t be “big” requirements every time you enter the kitchen.

Menu 1- Buffalo Chicken Sliders & Salad

Tangy buffalo sauce and cool Ranch dressing combine to make the perfect sauce for these unforgettable Buffalo Chicken Sliders! Throw in smooth cream cheese, tender shredded chicken and warm melted cheddar piled high on crisp Hawaiian rolls and you have a super-tasty, easy hot meal! This meal idea is built around a rotisserie chicken from your local grocery store, so it's low fuss from start to finish and doesn't ask a lot from you in the kitchen.

Menu 2- Hearty Kale Sausage & Potato Soup & Sides

Balance Menu 1 with this serious comfort meal! While it takes a bit more time, Menu 2 is still anything but hard. Sausage Potato Kale Soup is a hearty, comfort soup the whole family will love! Loaded with velvety red potatoes, savory sausage, salty bacon and tender kale, this cozy one pot recipe is reminiscent of Zuppa Toscana, uses simple, everyday ingredients and is completed with an easy side dish of roasted asparagus and stuffed cheesy olive bread- a reader favorite!

Here’s What We’re Snacking On

Don’t let any olives go to waste! Let your ingredients pull double duty this week by using some of those olives to make these simple Marinated Olives. Soaked in olive oil that’s been infused with loads of garlic, lemon, herbs and a red pepper kick, these homemade Italian marinated olives are a wonderful snack on their own and are the ideal addition to any cheese board.

Making Breakfast Easy

This easy breakfast French toast bake is loaded with plump, sweet red strawberries and buttery pecans. It’s a gorgeously inviting casserole! Make it ahead of time or the day of, then enjoy it all week to make having a hot breakfast an easy affair. Just top it off with a drizzle of warm maple syrup and you’ve got guaranteed French toast heaven.
