This week’s meals are centered around comforting beef stew with sweet potatoes and simple crock pot BBQ chicken thighs. These reader favorites are sure to become your family’s favorites.
This Meal Plan’s Secret To Success
As always, I think it’ smart to plan meals whose dishes and recipes share ingredients. This makes grocery shopping easier by limiting the number of things you have to buy at the store, keeps the pantry and fridge organized by eliminating those bits and pieces of leftover ingredients you have to find a place for and sometimes end up wasted because they’re never used!
This week, purchase a 3-5 pound bag of Yukon gold potatoes for your stew and for your mashed potatoes. Peel and chop the potatoes for both recipes when prepping your stew. Put the diced potatoes for your mashed potatoes in a bowl, cover them with water and plastic wrap and store them in the fridge until the next day when you are ready to make mashed potatoes!
Menu 1- Beef Stew with Sweet Potatoes
This rich and hearty beef stew kicks carrots to the curb and is loaded with sweet potoates instead! Gold Yukon potatoes, flavorful sweet potatoes, garlic and onion simmer to together to make a heartwarming meal. This recipe makes a family sized portion. If you're looking for a meal for two, simply half the recipe when making it or make it all and freeze part for later! (freezing instructions included)
Menu 2- Crock Pot Chicken Thighs & Side Dishes
Cooking with the slow cooker makes dinner prep so much easier! This recipe uses your favorite BBQ sauce with just a few add-ins to create deliciously easy chicken thighs. Crock Pot BBQ Boneless Chicken Thighs has been a reader favorite for several years!
Here’s What We’re Snacking On
This week, our snack recipe and dessert recipe are one and the same! Sugar Candied Peanuts make an easy snack to munch while we’re watching NFL playoff games, putting puzzles together or playing cards (our favorite January past times), and they also serve as that “little something sweet” we might be craving after a meal.
Making Breakfast Easy
Perfect for using those last pieces of New Year’s ham, this Ham & Swiss Quiche has a secret ingredient that makes for a creamy, silky quiche every time! There’s nothing like the classic combo of savory ham and punchy Swiss cheese for breakfast or lunch!
