This Week’s Secret To Success
- These meal ideas have busy schedules in mind! Each includes a recipe:
- that saves time,
- has an easy cooking method
- or is meant to be eaten on the go!
- While both of the main dishes are chicken recipes, I do like to use chicken breasts for my enchiladas and, of course, chicken thighs for crock pot BBQ recipe. So this might not be the week for buying chicken in bulk.
- However, purchasing the larger 24 ounce carton of sour cream might save you a bit while still being enough to make the enchilada sauce and the pasta salad dressing.
- Stop in on your farmer’s market and local roadside stands for blueberries, blackberries, mint, cilantro, corn, black eyed peas, cherry tomatoes and green onions. Good ingredients make it so much easier to be a good cook!

Getting The Most From This Menu
- If you’re not feeding a big family, you might choose to make one of the salads (pasta salad or cornbread salad) and serve it for both meals. Both recipes make quite a bit.
- OR consider buying those chicken breasts in bulk, grilling up a few extra, slicing them and serving them in the pasta salad for a delicious 3rd meal!
- Save the cobbler for the weekend and invite a few friends or some family over for a little classic southern summer get together with homemade ice cream!
