Monday Menu #187- Chicken Thighs & Enchiladas

This week’s Monday Menus use convenient cooking methods to help you get delicious meals on the table! Tex Mex Sour Cream Enchiladas, easy Charro Beans, Crock Pot BBQ Chicken Thighs and Cornbread Salad all come together to make quick and easy family meals you’ll love!

This Menu’s Secret To Success

  • There’s no discounting the ease of crock pot cooking. Set it up to cook all day while you’re at work, running errands or helping at the kids’ school!
  • Cornbread Salad is an all-in-one kind of side dish with bread and veggies in a crazy good dish that no one expects. It even doubles as a great lunch the next day!
  • Authentic Tex Mex Sour Cream Enchiladas take a minute to roll up, but that’s ok bc you’ve got a no-stress, short cut Charro Bean recipe up your sleeve.
  • Make your pasta for the Street Corn pasta salad ahead of time and store it in the fridge in a gallon zip top bag to make enchilada night even easier.
  • Lastly, don’t forget to make the most of all that end-of-season produce at the farmer’s markets and roadside stands this week. These recipes use peas, corn, tomatoes, green onions, peppers and blackberries!

A successful meal isn’t just about tasty or convenient recipes. It starts in the kitchen with ingredients, measurements and cook times, but it ends around the table with those you love.

Menu 1- Crock Pot BBQ Chicken Thighs

Who can resist juicy, tender BBQ boneless, skinless chicken thighs cooked with the ease of the slow cooker?  Hands-off cooking has never been so easy or delicious!  Coated with a simple rub then bathed in your favorite sauce with just a few tweaks, fabulous fall-apart BBQ chicken with layers of flavor is served. This week, serve it a Southern Cornbread Salad for a complete meal and wash it all down with refreshing Mint Lemonade.

Menu 2- Tex Mex Sour Cream Enchiladas

There’s no need to hit up the restaurants.  You can serve your family authentic Tex Mex any night of the week with this wonderfully easy sour cream chicken enchiladas recipe. Paired with Mexican Street Corn Pasta Salad and my easy Charro Beans, this meal is bound to be a family favorite!

Dessert This Week

Pears are in season, and dessert is easy with this easy Apple Pear Crisp! Layers of sliced apples and pears are wrapped in a brown sugar cinnamon filling, full of warm spices and topped with a crunchy oatmeal pecan topping.

Breakfast Made Easy

Looking for something different to do with one of summer’s favorite berries?  This French-toasted blackberry grilled cheese is going to cultivate a whole new appreciation for the purpley-black, many-lumped darling of the South.  When those plump berries start falling from the vine by the ice cream bucket loads, this breakfast sandwich starts calling my name.

Snack of The Week

Ham & Dill Pickle Roll Ups with a cream cheese center make great after school snacks, are awesome appetizers at picnics, game nights, and cookouts.  And if you’re low carbing it… well, you’re about to get your pickle on because these aren’t just your ordinary rollups, these are made pinwheel style with a little red pepper kick.
