Fruit & Waffles Parfaits

Waffles have never looked or tasted so good! This quick and easy recipe uses frozen waffles, strawberries, pineapple tidbits and a fluffy whipped cream mixed with a touch of Greek yogurt to create gorgeous Fruit & Waffles Parfaits guaranteed to make any brunch occasion special!

Why Is It Called A Parfait?

Parfait is the French word for “perfect,” and I can’t think of a better name for these wonderful, layered treats!

A traditional American parfait (different from a French dessert parfait) usually consists of layers of cream (frozen yogurt or ice cream) and fruit with a whipped cream topping served in a tall glass with a long spoon called a parfait spoon.

More common though, is a “healthy” yogurt parfait made from layers of yogurt, fruit and granola.

This recipe delivers on all fronts to create a dreamy brunch recipe, swapping granola for waffles, whipping real cream and yogurt together and piling in loads of fresh fruit.

Recipe Ingredients & Overview

  • frozen mini waffles (I used Belgian style Brioche waffles.)

  • Greek yogurt
  • vanilla extract
  • sugar

Recipe Add-ins & Substitutes: Sour cream is a good substitute for Greek yogurt and might be an ingredient you already have in your fridge!

As a shortcut, use the pineapple juice from the drained pineapple to soak the fruit instead of orange juice.

Add a little orange zest as a garnish/topping for extra zing.

Add any other berries you love!

How to Make Fruit & Waffles Parfaits

Prep Waffles. Toast the frozen waffles according to the package instructions. Cut 2 of the waffles into halves and the rest into quarters or smaller pieces.

Prep the Fruit. Drain the pineapple tidbits. Remove the tops of the strawberries and quarter them. Toss the pineapple and the strawberries together in a bowl with orange juice, 4 tablespoons of sugar and 1 teaspoon vanilla extract. Set aside and allow strawberries time to macerate, or release their juices.

Whip the Cream. Using your stand mixer or a glass bowl with your hand mixer, beat the whipping cream on high for 2-3 minutes until peaks form. Add 2 tablespoons of sugar, 1 teaspoon vanilla and the Greek yogurt. Gently fold those ingredients into the whipped peaks using a spatula to make the whipped cream mixture.

Assemble. Fill the bottom of 4 (8 ounce) glasses with ½ of the waffle pieces. Top with a dollop of whipped cream. Spoon in a layer of fruit. Repeat layers.

Top It Off. Cut a small slice into the bottom of the waffle halves. Fit the waffles onto the sides of the glasses. Add a whole strawberry next to the waffle. Finish with a final dollop of whipped cream and a drizzle of honey.

My Best Tip for Making Neat Parfait Layers

To make neat whipped cream layers, I always use a piping bag with a large round tip to pipe the cream into the glasses. Spooning it in can make the sides of your glasses messy.

A piping bag can make assembling these fruit and waffle parfaits a lot quicker too, especially if you are creating a large number for a party.

To use a piping bag, simply use a spatula to scoop the cream from your mixing bowl into the bag. Twist the top of the bag down tightly against the cream, put the tip in the glass close to the layer you want to fill and gently press to pipe the cream into the glasses.

How I Serve Fruit & Waffle Parfaits

I always serve my parfaits in a stemmed or footed glass, usually collected or handed down glassware like the ones in my photos.

Ingredients

  • 6 frozen mini waffles
  • 1 pint strawberries
  • 20 ounces pineapple tidbits
  • ¼ cup orange juice
  • 6 tablespoons sugar (divided 4+2)
  • 2 teaspoons vanilla extract (divided 1+1)
  • 1 cup heavy whipping cream
  • 4 ounces Greek yogurt

Instructions
