This quick and easy recipe uses frozen waffles, macerated strawberries, pineapple tidbits and a fluffy whipped cream mixed with a touch of Greek yogurt to create gorgeous Fruit & Waffles Parfaits guaranteed to make any brunch occasion special!
Toast waffles according to package instructions. Cut 2 waffles in half and the rest into quarters or smaller pieces.
Drain the pineapple tidbits. Remove the tops of the strawberries and quarter them. Toss the pineapple and the strawberries together in a bowl with orange juice, 4 tablespoons of sugar and 1 teaspoon vanilla extract. Set aside and allow strawberries to release their juices.
Using your stand mixer or a glass bowl with your hand mixer, beat cream on high for 2-3 minutes until peaks form. Add 2 tablespoons of sugar, 1 teaspoon vanilla and the Greek yogurt. Gently fold those ingredients into the whipped peaks using a spatula to make the whipped cream mixture.
Fill the bottom of 4 (8 ounce) glasses with waffles pieces. Top with whipped cream. Spoon in a layer of fruit. Repeat layers.
To top parfaits, cut a small slice into the bottom of the waffle halves. Fit the waffles onto the sides of the glasses. Add a whole strawberry next to the waffle. Finish with a final dollop of whipped cream and a drizzle of honey.

Notes
To make neat whipped cream layers, I always use a piping bag with a large round tip to pipe the cream into the glasses. Spooning it in can make the sides of your glasses messy.
