Who doesn’t love a little Tex Mex for dinner (and breakfast)? This week, we’re going all out with Mexican-inspired recipes sure to satisfy all your fiesta cravings! Catalina Taco Salad is a retro church potluck favorite. Make it special with your own homemade dressing and some chunky guacamole. Follow that with No-Mess Chicken Nacho Foil Packs! Olé!

This Week’s Secret To Success

  • The recipes in this week’s dinner ideas are perfect for making in the same week together! They share lots of the same ingredients, making grocery shopping and prep easy and efficient!
  • As a matter of fact, it’s so focused you’ll wonder if you bought enough groceries for the week. But don’t worry; you did!
  • Look for ways to buy repeat ingredients like cheese, tomatoes, onions and avocados in bulk or larger packages that contain enough for all the recipes instead of buying individual amounts for each recipe.
  • Go ahead and prep all those veggies as you use them. Chop one tomato? Go ahead and dice them all. Every little step puts you ahead for the week!

In The Know

Not having the right tools might be the reason you don’t like cooking.

For years, I cooked using whatever I had. Prep took longer and was harder than it had to be. But the biggest frustration was I didn’t always get the end results I wanted.

For the last few weeks, I’ve been sharing some of my favorite kitchen tools that have made cooking so much quicker and easier. They help me get the kinds of results I want, and that makes cooking SO MUCH MORE SATISFYING.

This week, I’m recommending:

  • indispensable casserole dishes in 2 sizes with lids– 9×13 and 8×8
  • a real deal pizza cutter
  • the mixing/ measuring bowl I use every single time I’m in the kitchen
  • the first knives I bought 
  • the cutting board I still use
  • this oil to care for it, wooden spoons and anything with a wooden handle

This retro salad full of crunchy Fritos, Ranch Style beans, and tangy Catalina Dressing is a great side dish.  But throw in a little ground beef seasoned just right, and it makes an incredibly good complete meal too.  It’s a serious favorite here at my house.  Serve it with your own homemade Catalina Dressing and deliciously chunky guacamole.
