Apple, Cheese, Celery Salad

Every table needs a simple salad.  This Apple, Cheese, Celery Salad has graced our family table for as long as I can remember.  One of my mamaw’s favorites, this salad plays off the classic pairing of sweet apples and mildly salty cheese with the crisp crunch of celery and a sprinkling of walnuts.  Mamaw considered this salad an absolute delicacy.  As a result, instead of Ambrosia, this salad held the spot of honor at every single one of our family gatherings and holidays.

It’s no surprise then, that the construction of this salad was considered serious business at our house, and at the ripe young age of 12, the job fell on my shoulders.  There I would sit, at the table in the middle of the kitchen, chopping apples, removing the strings from the celery and unwrapping  blocks of cheese while holiday stirring and tasting and seasoning happened all around me.  It was a whirl of busy preparations.

 

Mayonnaise added to Apple, Cheese, Celery Salad

As I’ve gotten older (and get to be in charge of more things), I’ve made a few changes to this salad so that from prep to serve is 10 minutes or less.  This is a simple, rustic salad with lots of taste.  It should be easy and quick to prepare.  The  biggest change was leaving the apple peels on.  I love the color the red brings to the salad, and talk about saving time!

I also use real mayonnaise and a touch of sugar to dress this apple, cheese, celery salad now because that’s what The Engineer likes best.  Growing up, however, we only used Miracle Whip to fluff this concoction.  So depending on your taste buds, you could do either!

And then there’s the walnuts.  This was a sometimes “add in” at Mamaw’s house.  But I just love the flavor and added texture they bring, so they are always an “extra” in my salad.

Apple, cheese, celery salad is just one of those simple family dishes that brings so much to a meal.  Not only is it packed with the sweet crunch of apple and celery against the smooth, saltiness of cheddar cheese, it’s filled with wonderful memories of family get-togethers and holidays that can never be replaced.

Ingredients

  • 2 medium apples
  • 12 oz mild cheddar cheese
  • 3-4 ribs celery
  • 1 C walnuts
  • 1 C mayonnaise maybe a little less
  • ½ teaspoon sugar

Instructions

  • Chop apples, cheese and celery into bite size pieces.  All should be the same size.  Add walnuts.
  • Mix together mayonnaise and sugar.  Stir into salad.
  • Serve immediately or chill before serving.

Notes

Salad is best when eaten the day it is made.

    As unique (odd) as this salad sounds I just had to whip up a half recipe to try.
    Pleasantly surprised by the taste, even my “No Salad Please” husband liked it.

    I love this salad. Kind of like Waldorf, but better with the cheese. Easy to make and very filling.
