This recipe is an adaptation of Don McLemore’s own recipe. Don is the 3rd generation owner of Big Bob Gibson’s Restaurant in Alabama. He says his grandfather came up with the original recipe in 1925 using just mayo, pepper, and vinegar.
- 1 ½ C mayonnaise
- ¼ C apple cider vinegar
- 1 tablespoon coarse black pepper
- 4 tsp. sugar
- 2 tsp. prepared horseradish
- 1 tsp. salt
- 2 garlic cloves, minced
- generous squeeze of lemon juice
- pinch of cayenne
Whisk ingredients together, or use an emulsifier, and refrigerate for several hours before serving/using.
