With all the taste of a peanut butter & jelly sandwich, these snack bites are more than just peanut butter & crackers when you need something to munch. They are bathed in white chocolate to take the PB&J's classic sweet & salty goodness to a whole new level!
To prep for the snack bites, line a sheet pan with wax paper or place wax paper under a cooling wrack.
Spread a thin layer of peanut butter on 12 of the crackers. Spread a thin layer of jelly on the rest. Be careful not to put too much (especially the jelly) or your sandwiches will be messy when you dip them. Assemble the sandwiches and set aside.
Melt white chocolate chips with 1-2 teaspoons canola oil either stove top or in a microwave. Stir together until smooth.
When chocolate is melted, dip sandwiches one at a time in white chocolate. Make sure all sides are coated. Use a fork to lift sandwich cracker from chocolate. Allow any excess chocolate to drip away. You can also gently shake the fork to remove excess chocolate.
Place coated snack crackers on sheet pan or wire rack to set. Can also be refrigerated for a quicker set. When chocolate hardens they are ready to serve!
