Instructions
In small dish combine the zest of 1 lemon and 1 tablespoon of sugar. Rub the zest and the sugar together between your thumb and forefingers to release the oils in the lemon zest and create a lemon-y sugar mixture.
In a small saucepan, stir together lemon juice and white sugar until the sugar is dissolved. Allow to come to a low boil, stirring occasionally. Add the lemon sugar, stirring to dissolve again. Allow to simmer for 7-10 minutes to create a strong lemon simple syrup. Remove from heat and whisk in vanilla extract.
Whisk the sweetened condensed milk together with the lemon simple syrup to create your lemonade coffee creamer.
Pour iced or cold brew coffee into a cup. Stir desired amount of creamer into your coffee and continue to stir until the creamer has melted completely into your coffee drink. Top with a dollop of whipped cream, mint leaves and a slice of lemon, if desired.
Notes
The nutrition information provided is a rough estimate for the entire recipe. Not one serving.
Rubbing the lemon zest and the sugar together releases the essentials oils from the zest, making sure we get the most lemon flavor absolutely possible. So don't skip this step!
This creamer does thicken and get quite stiff when chilled (it's the condensed milk). To use, just whisk the creamer into your cup of coffee until the condensed milk dissolves.
If adding to iced coffee, I recommend whisking the creamer into your coffee before adding your ice. It's just easier!
