Summer Melon Salad with Rotisserie Chicken

Ingredients

Salad

  • 4 cups baby spinach & arugula mix
  • 2 cups cubed watermelon
  • 2 cups cubed honeydew melon
  • 2 cups cubed cantaloupe
  • 1 cup chopped walnuts
  • 4 ounces crumbled feta

Garlic Lemon Salad Dressing

  • ½ C Olive Oil extra vigin
  • ¼ C Apple Cider Vinegar
  • 1 small Lemon juiced
  • 1 tablespoon Garlic minced
  • 1 tablespoon Parmesan cheese powdered
  • ½ teaspoon Salt
  • 1 teaspoon Black pepper

Instructions

Salad

  • Arrange spinach and arugula on a large platter. Add salad each ingredient in a row on top of the salad greens. Serve with garlic lemon vinaigrette salad dressing.

Salad Dressing

  • Add all ingredients into a food processor and emulsify.  Serve immediately.  If not serving immediately and dressing settles and separates, simply shake before serving.
